Spicy Clam Spread
Southerners expect and almost demand a savory spread at any even involving cocktails (which mans virtually all social get-togethers), so Mother certainly would never disappoint her guests at a formal cocktail supper, even when one or two other appetizers are served. (We won't even get into how Rebels also relish sweet appetizers with their drinks.) She uses this basic formula also to make crabmeat spinach, and ham spreads, so feel free to experiment.

Focaccia with Grapes (Schiacciata con L'uva)
Schiacciata means "flattened down," and in Tuscany the term generally refers to flatbread—what everyone else in Italy calls focaccia. During the wine-grape harvest, Tuscans make a not-too-sweet dessert or snack of bread dough and grapes, said to be of Etruscan origin.
Realistically, at this time of year in the United States it will be hard to find a grape flavorful enough for this recipe. If you can't find great grapes, save this recipe for next autumn, when Concord grapes are in season, and substitute the almond cookie recipe.
Cherry and Peach Compote

Deep-Fried Broccoli and Carrots in Scallion and Caper Beer Batter
Beer makes for a particularly crisp batter here, and the capers add piquancy. The broccoli and carrots work well in this recipe, but cooks might use other favorite vegetables too, adjusting the deep-frying time as necessary.
To Make Sugared Cranberries and Mint Leaves
Though the cranberries look gorgeous, you wouldn't want to eat them—they're extremely tart when raw. The mint leaves, however, are positively delicious. Fresh raw cranberries yielded the most attractive garnish; thawed frozen berries may collapse and shrivel. Feel free to increase the amounts we've provided here if you'd like to make your decoration more elaborate.

Green Olive and Almond Tapenade
"One night when friends were coming over for cocktails, I wanted to make some hors d'oeuvres," says Amy Sue Keck of San Diego, California. "Though most tapenades I've tasted have been made with black olives and anchovies, I only had green olives in my cabinet—and no anchovies! So I added some toasted almonds instead, and my green "tapenade" was a hit. I still make it this way."

Raspberries and Blackberries in Red-Wine Syrup
The nutty, slightly spicy flavor of the sweet red wine works well with the berries in this dish.

Apricot Leather
This fruit leather makes a satisfying energy snack and is delicious in place of chutney on a sandwich (we loved it in a ham and cheese wrap). For an easy hors d'oeuvre, spread 4 tablespoons softened mild goat cheese onto an 8-inch square of leather. Sprinkle the cheese with 1 tablespoon chopped pistachios and tightly roll up leather into a log. Chill the log and slice it into 1/4-inch-thick rounds.
Cheddar Croquettes
These can be served as hors d'oeuvres, or placed atop a salad of spinach, walnuts and sliced apples.
Spicy Yogurt Dip with Chips and Vegetables
Keep the fried shallots, dip, chips, and raw vegetables separately; just before digging in, top the dip with shallots.
