A Salad of Roast Tomatoes

A tomato’s flavor intensifies in the heat of the oven. All its sweet-sharpness comes to the fore. I eat these warm, sprinkled with a little herb vinegar, sometimes sandwiched inside a crisp and chewy baguette.

Slow-Roast Tomatoes with Thyme and Mozzarella

Late summer, the sun high, the vegetable patch is filled with slow-moving bees and tiny, piercing-blue butterflies. The day stands still, baking in the sunshine. The cats lie silently on the dusty stone terrace, too hot to move. It is the day for a lunch of melting softness. I wander into the kitchen on bare feet to roast tomatoes and break open a milky, silky buffalo mozzarella.

Baked Tomatoes with Cheese and Thyme

The first time I made this, I discovered a wealth of delights: the way the tomato holds the little cheese like an eggcup holds an egg; the point at which the juice of the tomato and the melted cheese meet; and the subtle difference in smell and flavor depending on which cheese you use. Two of these tomatoes are lunch for me if there is something else on the table—a couscous salad, perhaps, or some bread and salami. Others may want more.

Green Beans, Red Sauce

The smell you get from slicing freshly picked runner beans and the warm, herbal notes attached to the stalk of a tomato are, to my mind, the very essence of summer. Put those scents together and you have a recipe that is pure pleasure to make. A dish that could only mean midsummer—something to eat with cold salmon, a slice of crab tart, or a plate of grilled sardines.

A Hungary-Inspired Stew for the Depths of Winter

Peppers, the red, collapsed horns in particular, are heavily linked with Hungary and its rust-colored stews. The Hungarians make ground paprika from them too, which has become their most famous culinary export. Despite their South American origins, Hungary is where I have found the most dazzling displays of peppers in the markets. Two minutes, even less, from the river and the Szabadsag Bridge, Budapest’s market stalls glow deep rust and gold with tins of paprika and strings of dried mahogany chiles. I love the crumbling wooden stalls of scarlet-capped mushrooms with their stray pieces of iridescent moss, wicker baskets of black sloes, and small sacks of red berries, and the apparently precarious piles of peppers, Christmas red, clean white, and burnt orange turning scarlet. The long peppers that curl back on themselves have the intrigue of Aladdin’s lamp but are awkward in the kitchen, tending to tip their stuffing out into the baking pan. You can roast them, though, with olive oil and lots of salt, and eat them with sesame bread torn into chunks. The most useful, called Gypsy and the size of a fat rodent, are perfect for stuffing: with spinach and cream; translucent onions, capers, parsley, and garlic; cracked wheat, green olives, and toasted pine nuts; ground lamb and cumin. But mostly they are baked with a shake of the olive oil bottle and a grinding of salt until they collapse, wrinkle, and melt into silken strips. You’ll need bread then, in fat, rough chunks, and maybe a glass of bright beer. From August to the close of the year is when the market has the most from which to choose. After that the peppers come dried, in long strings of tobacco, madder, and soot. They shouldn’t be despised. By then the stalls are mostly piled with roots and cabbages, endless sausages, and wholesomely fatty pork. The paprika stalls, stacked with red and gold tins, are kitsch in a Hansel and Gretel way, their shelves covered in fastidiously ironed lace, like the old women who run them. Gulyas, or goulash, means “cowboy” and was traditionally cooked over an open fire. My paprika-scented pork stew—you could use beef-departs not too radically from the classical dish. I include dried mushrooms and cook it in a low oven, giving it a particularly deep, smoky flavor.

As much as I like big flavors, I sometimes want something more gentle, a little genteel even. French beans lend themselves to such cooking.

Peppers with Pork and Rosemary

The deep sweetness of a roasted pepper makes it a suitable candidate for an exceptionally savory filling. I have tried several over the years: beef with cinnamon and tomato; minced chicken, lemon, and chiles; and more recently mozzarella and cherry tomatoes. Each had its merits, especially the latter with its tart juices. The latest manifestation of the stuffed pepper in my kitchen is one of highly seasoned ground pork with rosemary, Parmesan, and garlic. I think of it as the best yet.

Baked Peppers for a Summer Lunch

My version of classic Italian baked peppers, but without the anchovies and with a last-minute stirring in of basil. There are some gorgeous flavors here, especially when the tomato juices mingle with the basil oil.

A Soup-Stew of Beans and Cavolo Nero

The soup-stew, a bowl of spoon-tender meat, beans, and aromatics that partly collapse into the surrounding stock, is one of the suppers I hold dearest. More often taken as lunch, this is food that feeds the soul as much as the belly, enriching, calming, quietly energizing. This is the cooking on which to lavish the cheapest cuts going, the fatty, bony lumps that butchers sell at reduced prices: mostly cuts from the neck and lower legs. Ingredients whose sole purpose is to give body to the liquid in which they cook. A knuckle end of prosciutto would be a sound addition here, if your local deli will sell you one. Most will charge very little. Butchers are an excellent source of ham bones with much meat attached. Failing that, I use a lump of ham, complete with its thick layer of fat.

A Hot Stew with Tomatoes and Cilantro

Hot, clean, and vibrant, a mouth-popping stew for scooping up with soft, warm naan or, if you prefer, rice. Should you want something richer and less spicy, then stir in a carton of yogurt, about 1 cup (250g), at the end and simmer for a further seven or eight minutes.

Spiced Eggplant Stew

A lovely, deeply flavored vegetable stew. This is one of those dishes that is all the better for a day in the fridge, during which time the flavors seem to mellow. I have kept it quite spicy but the final seasoning will depend on how hot your chiles are, and you will need to adjust it accordingly. Something to take your time over. I eat it with steamed basmati rice.

Eggplants Baked with Tomato and Parmesan

Eggplant and tomato are excellent bedfellows; the sweet sharpness of the tomato adding much in the way of succulence to the bland flesh of the eggplant. Garlic and olive oil are almost certain to come along for the ride. What follows is a recipe I use over and again as a relatively quick supper, occasionally introducing mozzarella instead of Parmesan, and sometimes adding basil with the tomatoes.

Roast Eggplants, Chiles, and Thyme

A sort of lazy guy’s ratatouille this, but better, I think, for its freshness and clean taste. I keep the chiles large here, which is partly why I have suggested using the milder varieties but, as always, it’s up to you. This works hot as an accompaniment to so many main dishes—roast lamb comes to mind—but as a warm salad too, and indeed, piled on hot toasted ciabatta as a weekday supper.

A Mildly Spiced Supper of Cauliflower and Potatoes

If a cauliflower is happiest under a comfort blanket of cream and cheese, we can run with the idea, dropping the cheese and introducing some of the milder, more fragrant spices such as coriander and cardamom into the cream instead. With its toasted cashews and crisp finish of spiced fried onions, this is a mild dish, so I see no reason to soften the blow with steamed rice, preferring instead to eat it with a crunchy salad of Belgian endive and watercress (or some such crisp, hot leaf ), using it to wipe the sauce from my plate.

A Bright-Tasting Chutney of Carrot and Tomato

I tend to use this chutney as a relish, stirring it into the accompanying rice of a main course. It is slightly sweet, as you might expect, but tantalizingly hot and sour too. Scoop it up with a pappadam or a doughy, freckled paratha (I have been known to use a pita bread in times of desperation). On Mondays I sometimes put a spoonful on the side of the plate with cold meats. Palm sugar (also known as jaggery) is used in Indian cooking and is available in Indian markets.

Cabbage with Beans, Coconut, and Coriander

Early January 2008 and I am having my annual tidy up of the pantry. The “lentil shuffle” as I call it, as that is basically what the job entails. Sorting out the pantry always results in my making something bean or lentil oriented. I think it must remind me of just how many I have. What follows is a rather hot bean curry. You could cool its ardor by skipping a chile or two. The greens offer a hit of cool freshness on top of the substantial and deeply spiced beans. A speedier version, suitable for a midweek supper, can be made with canned beans. There is no real reason why you shouldn’t use any dried or canned beans you wish here. Chickpeas will work well too. If I do decide to open a can instead, then I use three 14-ounce (400g) cans.
