Rich, dark, and sweet, honey cake was originally a kind of pound cake made by people who could not afford refined sugar or flour (many old honey cake recipes use rye flour, not exactly what we think of as dessert). This is a light, more modern (at least twentieth-century) recipe, quite succulent. Some people stir raisins (about 1/2 cup) and/or chopped almonds or walnuts (also about 1/2 cup) into the batter just before baking. Others cut the loaves in half after baking and add a layer of jam, then reassemble. Personally, I like my honey cake plain.
Génoise
The basic cake of the French pastry repertoire is génoise, used as the foundation for dozens of cakes and other desserts. While it is essentially sponge cake made with butter, it’s rarely eaten plain or on its own. Rather, it might be moistened with liqueur or sweet or fortified wine (Grand Marnier, Sauternes, or Oloroso sherry, for example) and served with a little whipped cream or used as a building block for other desserts like Trifle (page 651).
Pakoras
Similar to Tempura (recipe follows), these are usually made only with vegetables—but a very wide assortment—and the batter is best when prepared with chickpea flour (also called besan or gram flour and available at Indian and many Asian markets and most health food stores). Traditionally, the batter also often contains anardana, a powder made from ground pomegranate seeds—if you can find some (try the same stores that have besan), add a teaspoon to the batter, along with the garam masala. Pakora batter can also be fried on its own, as a fritter; mix a medium onion, chopped, into it, and drop it by the tablespoon into the hot oil.
Buckwheat Crêpes
Everyone knows about sweet crêpes (page 645), but visitors to France quickly become addicted to these—the classic snack food of Brittany—especially the ham-and-cheese variation. Traditionally, the batter sits for an hour before starting to cook. As long as you plan ahead a bit, that shouldn’t be a problem. But in a pinch you can skip the resting period—it doesn’t make too much difference—and overall these are easy to make and great as savory starters or a light lunch or supper.
Pajon
In Korea, this popular starter and snack is served at home, in restaurants, and on street corners. (It’s also one of the most popular dishes in Korean restaurants in the States.) At its most basic, it’s a large egg batter scallion pancake, but other vegetables, meat, and seafood are often added to make it a fancier and more substantial dish. Glutinous rice flour creates a wonderfully chewy texture, but if you can’t find it, all-purpose flour is perfectly fine. Serve these immediately after making them.
Char Siu Bao
To make these classic steamed rolls at home, you might pick up char siu—barbecued pork—in one of the myriad of Chinatown restaurants that have roast meats hanging in the window. Or you can make the Barbecued Pork (page 373) and the buns a day or two later. Fortunately, the buns themselves are easy to make, and they can be made as much as a month in advance: let them cool to room temperature after they’ve steamed (which should only take 15 minutes or so), then line them up on a baking sheet, cover tightly with plastic wrap, and freeze. Once they are frozen you can transfer them to a freezer bag or other airtight container. To serve, reheat the dumplings in a steamer over an inch of boiling water for 5 minutes. Serve these as a starter or a snack.
Gogi-Jun
Serve these spicy little pancakes as an appetizer—they’d even work at a cocktail party—or as part of a meal. They’re not especially delicate (in fact they’re pretty filling), and they’re frequently served at room temperature, so feel free to make them in advance.
Empanadas
A street snack of Central America and the Caribbean, empanadas can really be filled with anything you have on hand. This recipe and its variations offer several of the traditional fillings. Masa harina can be found at most supermarkets and Latin grocery stores. It adds a nice crunch to the dough, but regular flour works well, too.
Farinata Genovese
Farinata, which is nearly identical to the socca of Provence, is a cross between firm polenta and a primitive pizza. To me it’s the perfect no-work Mediterranean appetizer, a great thing to have in your repertoire if you want to make sure there’s something warm for guests to eat when they arrive—or if you just want to round out a pasta dinner for the family on a weeknight. Keep the pepper mill nearby when you serve the farinata; it’s best with an almost perverse amount of freshly ground black pepper. You can buy chickpea flour at health food stores, Italian markets, Middle Eastern stores, and specialty food shops.
Corny Corn Muffins
In the restaurant, we serve our guests hot cheese biscuits and hoecake cornbread at lunchtime, but at dinner we swap out the hoecakes for these wonderful melt-in-your-mouth corn muffins.
Green Muffins
