Coq au Zin
"While traveling in the Northern California wine country with friends," writes Stephen Carkeet of Merced, California, "we ate dinner at Zin Restaurant & Wine Bar in Healdsburg and had one of the best meals I can remember. Chef Jeff Mall prepared a wonderful chicken dish he called 'coq au Zin.' It was a winner."
A taste — and word — play on the classic French dish coq au vin, this time made with red Zinfandel. At the restaurant, this is served with creamy mashed potatoes.
White Bean, Kale and Roasted Vegetable Soup
Many dark, leafy greens, like kale, contain calcium. The beans have it, too.
Hominy, Tomato, and Chili Soup
Tostadas caseras — corn tortillas that have been seasoned and fried — can be found with the tortillas in most supermarkets. The soup can be made one day before serving.
Chunky Lobster Stew
Lobster stew is a very traditional dish made with lobster, milk, butter, salt, and pepper. You will find this in many restaurants in Maine, the best being the ones with the most lobster. I have embellished on the original dish but have left intact the strong and rich lobster flavor. When Craig Claiborne asked me to put together a New England Thanksgiving dinner, this was the soup I served. It is also great as a hearty main course soup.
Veal Bocconcini with Porcini and Rosemary
Though you may associate bocconcini with the tiny mozzarella balls sold at Italian markets and cheese shops, the word simply means "little bites" (the veal in this stew is cut into bite-size pieces). When purchasing dried porcini, look for packages containing large, flat, recognizable slices of the mushroom.

Eula Mae's Seafood Gumbo
If you can, buy fresh shrimp with shells and heads still intact. If the heads have been removed, don't worry. Peel the shrimp and use the shells to make shrimp stock. Put the shells (and heads) in a small stockpot. Add 6 cups of water and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, for about 1 hour. Remove from the heat, strain through a fine sieve, and set aside. If you don't have shrimp stock, water can be substituted.
Lamb Stew with Spinach and Garbanzo Beans
"When my ancestors left Spain and settled on the Greek island of Rhodes five hundred years ago," writes Rebecca Levy of Los Angeles, California, "they brought with them their Sephardic culture. Likewise, when I fled Greece during World War II and eventually relocated to Los Angeles, I brought with me the traditions of my home. Many of my recipes are centuries old, and since each one is connected to a story, I always try to tell a little anecdote about the food so that the history will not be lost."
Serve the stew over rice to soak up the juices.
Monkfish and Clam Bourride
The Mediterranean fish soup bourride is something like a bouillabaisse but has a consistency more like stew. Instead of putting the aïoli directly into the soup, as is traditional, Adams likes to dollop it onto toasts.

To make this a vegetarian chili, use an additional eight ounces of lentils instead of the pound of ground beef.
Pork and Hominy Stew
Similar to the Latin posole, this stew would be terrific with yellow rice (there are several supermarket choices) and an avocado, grapefruit and red onion salad. Cinnamon-spiced brownies make a good dessert.
Ham and Succotash Stew with Cheddar Biscuits
Can be prepared in 45 minutes or less.
Oyster Chowder
Accompany the chowder with saltines or Crown Pilot crackers. A side of steamed broccoli with lemon dressing is also nice, as are individual pecan pies á la mode for dessert.
