The Creamiest Aioli
Think of this aioli as your secret sauce. Made by transforming egg yolks, garlic, and olive oil into a creamy dip, it's Provence's answer to mayonnaise. The secret is creating a tight emulsion of the yolk and oil. The technique, thankfully, is less scientific: "Add a thin drizzle of oil and whisk like crazy," says Suzanne Goin, chef at L.A.'s Lucques, Tavern, and A.O.C. Her version lets the egg shine by using half flavor-neutral grapeseed oil so the olive oil doesn't dominate. The result is a harmonious sauce with a supple texture (thanks to hand-whisking instead of using a blender) that begs to be spooned onto meat, bread, and fish. Goin serves it with salmon and poached spring vegetables, but no matter what you pair it with, this sauce is the star.
Grilled Pineapple Salsa
My aunt Martha swears that this smoky, sweet, tropical salsa takes her back to Yucatán no matter where she is when she makes it. It works especially well with Cilantro Tandoori Chicken, but it will enhance any grilled fish or meat. If the grill's fired up, throw the pineapple right on it; a grill pan will do just fine if you're cooking indoors.
Salsa Borracha
"Drunken" salsas have been around forever. They were originally prepared with pulque, an alcoholic beverage made from the fermented juice of the once-sacred maguey (agave) plant. Pulque, which is not easy to find outside of Mexico, is not distilled and has a much stronger flavor than tequila, which I use in its place in this recipe. The alcohol is mostly burned off in the cooking process, leaving only its musky flavor. The sweetness from the freshly squeezed orange juice gives this salsa a wonderful balance.
Sesame Seed and Árbol Chile Salsa
Nuts and seeds have been making their way into Mexican sauces and salsas for centuries. The nutty sesame seeds in this salsa, which is served at a very popular small restaurant in Tijuana called Mi Rincón Cenaduria (My Restaurant Nook), give it body and depth. Use this on steak tacos or even with grilled chicken. Peanuts can be substituted for the sesame seeds.
Ginger-Tamarind Chutney (Inji Puli)
This tart and spicy condiment is always served with a Sadhya feast. It is especially nice mixed with plain rice and yogurt as a palate cleanser. This recipe is part of our menu for Sadhya, a South Indian feast.
Pickled Pears
We love the way these quickly pickled, supercrisp pears play off the briny and intense kimchi.
Red Wine Vinaigrette
This is the classic salad dressing, one I rely on all the time not only for salads but as a marinade for meats, to drizzle on crostini, and more.
Chili Oil
This simple recipe is not only great for bread-dipping, but can also be used to liven up the flavors in other dishes—as your cooking oil, or in salad dressing, or as a pasta topping, or just drizzled over grilled fish or meat.
Béchamel Sauce
This basic white sauce is what gives many pasta dishes, like lasagna, a rich creamy texture. It’s not hard to make and you’ll find lots of uses for it.
Basic Marinara Sauce
Every cook should have a good marinara sauce in his or her repertoire, and I think this one is just about perfect. Though not as quick to throw together as some of the other tomato sauces I depend on (see page 164 for a really quick, basic sugo), the time you invest in making it will be repaid with a full-flavored, robust sauce that can be used in dozens of different ways. The sauce freezes very well, so why not make a double batch to freeze (after cooling completely) in 2-cup portions? Frozen sauce may be stored for up to 3 months.
Shrimp with Kiwifruit-Lime Relish
Kiwifruit, lime juice, chiles, and cilantro make a tropical—and antioxidant-rich—accompaniment to simple seared shrimp; you can also use the relish to top grilled fish, or as a healthy dip with tortilla chips. Serve the shrimp and relish with black lentils and whole-wheat naan (Indian flatbread), as shown, or with brown rice and tortillas.
Classic Guacamole
Good guacamole relies on soft, ripe avocados. The Hass variety has a buttery flesh with delicate herbal flavor. If you don’t have a mortar and pestle, crush the first four ingredients in a bowl with a wooden spoon, then use a fork to mash the guacamole.
Spicy Papaya-Carrot Salsa
Chayote is a member of the gourd family, along with cucumbers, melons, and squash; it is mild tasting, with a crisp, pearlike texture. It is often used in salads and salsas, or baked and stuffed, like other squash. If you can’t find one, you can substitute honeydew melon instead, adding it after the mixture has been cooked and allowed to cool.
Steak with Spicy Papaya-Carrot Salsa
A papaya salsa with fiery Scotch bonnet chiles makes a colorful—and spicy—condiment for grilled steak. The salsa also goes well with grilled fish, particularly snapper. For less heat, seed the chiles before slicing them.
