Cracked Pepper Focaccia with Truffle Oil
Truffle oil adds an earthy nuance, but using olive oil will also result in a delicious bread.
Sauteed Radicchio and Fried Kale
Radicchio di Treviso has long, narrow, pink-to-red leaves that are similar in taste to Belgian endive. It can be found in specialty food markets.
Tarragon Green-Peppercorn Vinegar
Flavored vinegars can be used to enliven dressings and marinades, finish pan sauces, or pickle vegetables--and they make wonderful gifts. Once the steeping is completed, these vinegars keep for several months. (Garnishes and other solids left in the jar, however, may discolor or break down.)
Pomegranate, Beet, and Blood Orange Salad
If blood oranges are unavailable, simply use the sweetest oranges you can find.
Basic Polenta
Cornmeal may be either fine- or coarse-grained. Both work well in the following recipe; we used a fine-grained variety found in most supermarkets.
Smoked Vegetable Salsa
If you have a gas grill and want great smoky flavor, soak hickory-wood chips in water one hour. Drain well; place chips in a disposable aluminum pie pan directly over flames (or over lava rocks if they are part of the grill's design). Allow chips to begin smoking, then grill vegetables until tender.
This recipe is an accompaniment for Spicy Barbecued Rib-Eye Steaks with Smoked Vegetable Salsa .
