Mediterranean Pasta Salad with Olives and Capers

Mary deMuth of Rowlett, Texas, writes: "Because my husband is in a graduate program, we've been able to meet people from all over the world. It has been a great experience for our three children — and a chance for me to add to my recipe collection. We frequently have other students over for dinner, so I'm always learning new dishes. Next year our family will be moving to southern France, and we're very excited about the food we'll have there. We hope to make many new friends who will share their Provençal specialties." This side dish is a perfect contribution to any potluck picnic. Toss in a can of drained tuna for a more substantial salad.

Grilled Three-Potato Salad

A charcoal grill will give the best flavor.

Kidney Bean Salad with Walnuts and Cilantro

The great flavor of toasted cumin adds a nice dimension to this easy side dish. It's an extra step that is definitely worth it.

Peach and Cucumber Salsa

It's hard to believe that this sweet, crunchy, and smoky salsa has only six calories per serving.

Marinated Eggplant with Mint

Serve these eggplant slices on crusty Italian bread spread with a mild, earthy cheese such as a fresh goat cheese. Active time: 30 min Start to finish: 8 3/4 hr (includes marinating)

Vegetarian Brown Rice Sushi Rolls

Brown rice is not traditionally used for sushi in Japan, but since it's such a healthy whole grain, we've decided to bend the rules. You'll have leftover vegetables, which are great for salads. Active time: 25 min Start to finish: 1 1/4 hr

Red Wine Barbecue Sauce

This sauce is basted on the meat as it grills. It would also be great served alongside; the recipe doubles easily.

Golden Beet and Sunflower Salad

To maximize the flavor of this salad, toss the beets with the dressing while they're still warm, so they'll absorb more of it. Sunflower seeds turn rancid fairly quickly, so it's important to purchase them from a place with high turnover, such as a natural foods store. Active time: 20 min Start to finish: 1 1/4 hr

Hot-and-Sour Coleslaw

Active time: 20 min Start to finish: 20 min

Roasted Potatoes with Herbs

Simplicity at its most comforting, this dish also makes a wonderful breakfast side.

California Vegetable and Chickpea Chili

Only native Californians like two wine-making friends of mine in Salinas can regularly throw together a vegetable chili such as this utilizing their almost year-round abundance of fresh vegetables and herbs. For those of us with seasonal gardens, various substitutions often have to be made (canned tomatoes, dried herbs, and the like), but such is the availability almost everywhere today of certain fresh produce even in the coldest months that no imaginative cook should have much trouble concocting a very tasty vegetable and bean chili according to this basic recipe. One advantage, by the way, of using a 28-ounce can of tomatoes with their juices instead of the fresh is that most likely you won't have to add any water to keep the chili slightly soupy.

Cranberry-Pineapple Relish

Pack this delicious condiment in decorative glass jars for a nice gift.

Cranberry-Port Conserve

A conserve usually consists of a mixture of fresh fruits, often with raisins, currants or nuts added. New England seafarers prized citrus fruits, which are perfect with native cranberries.

Chick-Pea and Eggplant Purée

This recipe is used to prepare Roasted Peppers Stuffed with Chick-Pea and Eggplant Purée and Mushrooms. Can be prepared in 45 minutes or less, but requires additional unattended time.
