Arugula, Fennel, and Apricot Salad

A V-slicer or mandoline is the perfect tool for thinly slicing the fennel. The fresh apricots add a nice sweetness to the salad, but feel free to skip them if they're not available in your area.

Savoy Slaw with Mint and Cilantro

The combination of daikon radish, rice vinegar, and sesame oil gives this slaw an Asian flavor.

Roasted Mixed Peppers with Capers and Marjoram

Charring the peppers adds a smoky flavor and brings out their sweetness. Steaming the charred peppers before peeling them allows the skin to separate easily from the flesh. Be sure not to rinse the peppers as you're peeling them—you'll wash away flavorful oils and sweet juices.

Habanero-Orange Salsa

Sweet oranges help tame the heat of the habanero in this zippy salsa, which would also be delicious alongside grilled pork loin.

Strawberry Granita with Beaujolais

This simple dessert is completed in the freezer—no ice cream maker required. Feel free to use your favorite red wine in this recipe, but keep in mind that a lighter-style wine (like Beaujolais) will really let the strawberries shine. If you choose a deeper red, such as Merlot or Zinfandel, the strawberry flavor will be less pronounced.

Mango-Sesame Dressing

You'll use some of the dressing for the grilled chicken and the rest for the noodle salad .

Pineapple, Arugula, Macadamia Nut

Trust us, this combination is super-clean and green, refreshing and yummy. The alkalinizing fresh pineapple pairs beautifully with the spice of the arugula/rocket. And macadamia nuts are a high-energy food that adds a crunchy rich texture and a healthy dose of protein and fiber (we don't mind at all if they do not fully incorporate) as well as monounsaturated fatty acids—or "good" fat—that significantly reduce blood serum cholesterol levels. Think of this smoothie as a cleansing, satisfying meal replacement. Get to know chia seeds. These miraculous little seeds are a form of easily digestible protein that is full of minerals, vitamins, and soluble fiber. Rich in omega fatty acids, and similar to flaxseed, chia seeds have the significant advantage of being more stable.

Strawberry BBQ Sauce

Kenna Jo created this recipe "to use a surplus of strawberries." She said it "brings a fresh and sweet take on traditional barbeque sauce." It's fantastic over pork or chicken, and it also makes a great sauce to serve with corn bread. Kenna Jo calls that "Strawberry BBQ Shortcake."

Sweet Shallot Vinaigrette

This is a light and very easy vinaigrette. I recommend serving it with any salad on which you'd like to use a flavorful but light dressing.

Los Barrios Salsa

This salsa is great with tortilla chips. The only problem is that it quickly becomes habit-forming—you just can't stop eating it. We serve a bowl of this salsa and a basket of warm tortilla chips to every table in our restaurant, and people always ask for more. I have even seen customers eating it with a spoon, like soup. It goes with everything, from breakfast to dinner, and it accompanies every meal at Los Barrios. It will keep for up to 4 days in the refrigerator and can be frozen for up to 2 months.

Pico de Gallo

A relish best made when tomatoes are at their peak of summer flavor, this is versatile and zesty. Serve it with Huevos Rancheros , with chips, or to top an omelet. It would go very nicely with the Spanish Omelet with Chorizo and Avocado. Once you get started making it, you'll think of many uses. Pico de gallo means "rooster's beak" in Spanish. This relish apparently got its name because it used to be eaten with finger and thumb, and the action looked like the pecking beak of a rooster.

Tomato Jam

This jam is the filling for the Rosemary Cookies with Tomato Jam . I often serve a small pot of it to accompany a sumptuous platter of perfectly ripened cheeses, one of my favorite desserts of all.

Red Wine-Raspberry Sorbet

If you don't believe the saying that the whole is greater than the sum of its parts, this simple yet incredibly good sorbet is proof positive that it can be true. This is my all-time favorite sorbet.

Raw Tomatillo Salsa

Editor's note: Use this salsa to make Deborah Schneider's Tacos of Carnitas Roasted with Orange, Milk, and Pepper . Tomatillos look like small green tomatoes in sticky, papery husks. In fact, they are relatives of the tomato and are a type of ground cherry. They are native to Central America. Fresh-tasting and excitingly tart, this chunky salsa is great on grilled meat, tostadas, or seafood. It can be made in less than a minute and should be used immediately.

Salsa Quemada (Roasted Tomato Salsa)

Editor's note: Use this salsa to make Deborah Schneider's Mushroom, Rajas, and Corn Taco with Queso Fresco . A very useful salsa that is easy to make and keeps well. Firm, fresh Roma tomatoes are dry-roasted until soft and well charred on all sides (quemada literally means "burnt"), then pureed into a smooth salsa with sweet toasted garlic, fresh cilantro, and onion. Salsa quemada clings to the dryer and chunkier taco fillings, adding moisture and great flavor. It is also a classic table salsa, perfect to serve with tostadas and totopos.

Homemade Flour Tortillas

Making tortillas from scratch can be a lot of fun, but it can also be a little frustrating. My eleven-year-old son, Jordan, rolls his tortillas out into perfect circles, but mine end up looking like the state of Texas! Don't give up if they don't come out right on the first try. Once you get the hang of them, everyone will be asking for more. These will keep, well wrapped, for up to 1 week in the refrigerator and up to 2 months in the freezer.

Avocado with Savory Tomato Sorbet and Chips

Your standard celebration staple—guacamole, salsa and chips—deserves a cool upgrade. The classic ingredient combo isn't only yummy, it's also good for you. The healthy monounsaturated fats in avocados help you absorb more cancer-fighting carotenoids from the tomatoes.
