Roast Potato Salad with Rosemary and Garlic
The idea of a potato salad usually involves slippery potatoes of the purest ivory, but an interesting take entails a much rougher texture brought about by roasting them before dressing.
A Salad of Potatoes, Mustard, and Cucumber
At first rich, then intensely warm and piquant, this is a perfectly balanced salad for accompanying fish or maybe a grilled steak. It is just the job with freshly dressed crab or smoked trout or eel. The potatoes should be warm when you dress them, and eaten within twenty minutes or so, giving them time to soak up the flavors but not dry out. If you are dressing the salad in advance, I suggest you make a double quantity of dressing.
A Soft Mash with Cream and Parsley
The affinity between potatoes and parsley is usually demonstrated by tossing new potatoes in butter and the chopped herb. I like to take it one step further and put the parsley in a soft, almost sloppy purée of potatoes. It excels as a side dish for white fish.
Green Beans, Red Sauce
The smell you get from slicing freshly picked runner beans and the warm, herbal notes attached to the stalk of a tomato are, to my mind, the very essence of summer. Put those scents together and you have a recipe that is pure pleasure to make. A dish that could only mean midsummer—something to eat with cold salmon, a slice of crab tart, or a plate of grilled sardines.
Baked Peppers for a Summer Lunch
My version of classic Italian baked peppers, but without the anchovies and with a last-minute stirring in of basil. There are some gorgeous flavors here, especially when the tomato juices mingle with the basil oil.
A Salad of Beans, Peas, and Pecorino
Among the charcoal and garlic of midsummer’s more robust cooking, a quiet salad of palest green can come as a breath of calm. Last June, as thousands joined hands around Stonehenge in celebration of the summer solstice, I put together a salad of cool notes: mint, fava beans, and young peas—a bowl of appropriate gentility and quiet harmony.
Roast Parsnips with Sesame and Honey
Whatever magic it may contain (and I certainly believe it does), honey is still sugar, and it seems extraordinary to add it to an already sweet root. But for some reason it works, bringing out the vegetable’s flavor and lending it a distinct depth. I can’t think of any better accompaniment to roast pork.
An Onion Rabbit
Of all the hot snacks I put together, it is this unctuous topping of onions, thick toast, and highly seasoned melted cheese that pleases most. The onions need to cook, with the occasional stir as you pass, for a good fifteen minutes or so. They are ready only when they are truly soft and golden—there is no shortcut. The leftover cold beer solves the problem of what to drink with your meal.
Kale with Golden Raisins and Onions
Even though much of the bitterness of this cultivar has been bred out, some extra sweetness is often welcome. Casting around for something sweet to scatter over a plate of steamed kale, I suddenly remembered the Sicilian habit of adding golden raisins to soft, sweet onions. The contrast between the leaves and their seasoning is strangely comforting. Quite when you might eat this is debatable. We first ate it with treacly rye bread and Gruyère cheese, next to fillets of smoked mackerel. It is tricky to know where it would sit most comfortably.
A Salad of Raw Artichokes
The juicy crunch of a raw artichoke bears many of the qualities of a water chestnut. Few ingredients pack such snowy crispness. I use them in a parsley-flecked salad to add a snap to baked pork chops, but have also offered them at a Saturday bread’n’cheese lunch of Cornish Yarg and Appleby’s Cheshire. Lemon is essential if the peeled tubers are not to discolor.
A Green Hummus
Elderly fava beans are possibly not on everyone’s shopping list, but in late July, when their sugar has turned to starch and their skins are as thick as writing paper, I have still made a good meal of them. They make a fresh-tasting hummus that always surprises people with its green notes. A silk purse out of a sow’s ear if ever there was one. There is another recipe for this in The Kitchen Diaries, but with dill. Good with bread, roast lamb, even alongside a piece of grilled fish. Like the popular chickpea recipe, somewhat addictive.
A Hot Stew with Tomatoes and Cilantro
Hot, clean, and vibrant, a mouth-popping stew for scooping up with soft, warm naan or, if you prefer, rice. Should you want something richer and less spicy, then stir in a carton of yogurt, about 1 cup (250g), at the end and simmer for a further seven or eight minutes.
Spiced Eggplant Stew
A lovely, deeply flavored vegetable stew. This is one of those dishes that is all the better for a day in the fridge, during which time the flavors seem to mellow. I have kept it quite spicy but the final seasoning will depend on how hot your chiles are, and you will need to adjust it accordingly. Something to take your time over. I eat it with steamed basmati rice.
A Classic Caponata
Sicily’s cooks make much of the eggplant. They fry it in crisp disks, with mint and vinegar; bake it with tomato sauce and salty caciocavallo cheese; stuff it with anchovies, parsley, and capers; or grill it over charcoal before seasoning with garlic and oregano. Occasionally, they will roll up a thick jam of eggplant in soft disks of dough like a savory strudel, called scaccie, while all the time matching it to the Arab-influenced exotica of their cupboards: anchovies, olives, fennel, mint, pomegranates, currants, and pine nuts. The thin, Turkish eggplant with the bulbous end is the one they prefer, though you could use any shape for their famous caponata, the rich sweet-sour stew braised with celery, golden raisins, vinegar, and bell peppers. I can eat this fragrant, amber slop at any time of year, but somehow I always end up making it when the sun is shining, eating it outside with flat, chewy bread and maybe some grilled sardines flecked with torn mint leaves and lemon. If you make it the day before, its character—salty, sweet, and sour—will have time to settle itself.
Moutabal—a Heavenly Purée
The smoky, parchment-hued cream moutabal is one of my desert-island dishes. Few recipes can produce anything as soft and sensuous as grilled eggplant, mashed to a pulp, and seasoned with lemon and sesame paste. The lemon is essential, working an ancient magic when involved with anything charred and smoky. Many lightly bake their eggplant for this, but without a good charring they lack the mysterious, smoky back notes that I consider as much a part of the ingredients as the eggplant itself.
Roast Eggplants, Chiles, and Thyme
A sort of lazy guy’s ratatouille this, but better, I think, for its freshness and clean taste. I keep the chiles large here, which is partly why I have suggested using the milder varieties but, as always, it’s up to you. This works hot as an accompaniment to so many main dishes—roast lamb comes to mind—but as a warm salad too, and indeed, piled on hot toasted ciabatta as a weekday supper.
