When I Dip, You Dip, We Dip: Tomato Sauce
Making your own tomato-based sauce to dip your cheese straws into or to spread on your pizza is super-easy. At the bakery, we usually toss something together with whatever spare veggies and tidbits we have lying around. The foundation, however, goes a little something like this.
Broiled Asparagus
Broiled asparagus is the vegetable side dish I prepare most often when I’m throwing a big dinner party because it’s sophisticated but quick and easy to make. Actually, I prepare it as often as I can, whether I’m having a dinner party or not, because it is my absolute favorite vegetable. I’d eat it for breakfast, lunch, and dinner if I could. The timing here depends on how thick the asparagus are—they can be pencil thin or super thick. Just pierce them with a knife; when it goes in easily, they’re ready to be broiled to get some nice, brown color.
Roasted Garlic
Tendersweet roasted garlic has a multitude of uses, either left whole, as in Thyme-Smoked Four-Inch Porterhouse Steak (page 168), or pureed, as in Roasted Garlic Mashed Potatoes (page 193). Keep the garlic oil for sautéing potatoes, making vinaigrettes, or brushing on fish before grilling.
Provençal Vinaigrette
This chunky, vibrantly colored vinaigrette is absolutely addictive! Each ingredient is bold on its own and together they form a tasty, slightly salty, slightly sweet, slightly acidic, rich flavor. It’s outstanding on all types of fish, particularly Grilled Tuna Steak with Spring Onions (page 131).
Parsley Sauce
Like pesto, this no-cook green sauce can be used in many ways. It’s awesome spooned over grilled vegetables, fish, chicken, pork, and lamb or served as a dip for crudités or focaccia. The parsley sauce can be made ahead of time and refrigerated, but is best when blended at the last minute to keep the deep green color. It’s featured throughout the book in recipes from parsley croutons (page 175) and Roasted Cauliflower (page 186) to Creamy Parsley Dressing (page 87).
Thyme-Smoked Four-Inch Porterhouse Steak
So you feel like steak? This one is a monster! For all of the card-carrying carnivores out there, this dish will turn you on. Porterhouse is a great cut because it’s like two for one—on one side of the steak you have the tender filet and on the other, the firm New York strip. Grilling with wood chips is a common way to infuse flavor into meat, but for extra oomph, I turn to herb-infused smoke instead. Tossing damp woody herbs like thyme (rosemary would work here as well) directly onto the fire lends a distinctive earthy essence. The intoxicating smell makes your belly grumble and always has a “wow factor” with guests. Serve with Roasted Garlic (page 238) and/or Porcini Worcestershire Sauce (page 242).
Grilled Leg of Lamb with Salsa Verde
Bone-in leg of lamb has marvelous flavor and is a traditional roast for festive family gatherings. There is a great deal of versatility in this cut, but my favorite way to prepare it is on a grill. Slow cooking on a grill keeps the lamb really tender and moist while adding an awesome smoky taste. The yogurt and lemon marinade helps carry the deep flavors of the lamb and also gives the meat a nice crust. The lamb needs to marinate for several hours, so plan accordingly. I love this with Greek Farro Salad (page 79), a bright, refreshing complement to the charred lamb.
Slow-Roasted Pork Shoulder with Pickled Onions
Sweet, succulent, and aromatic, this sophisticated yet homey family-style supper is definitely one to pull out when company is coming. Not only is pork shoulder super satisfying, but the cut is also an inexpensive way to feed a lot of people. Serve with herbaceous Parsley Sauce (page 239) and creamy Cheese Grits (page 189) for a lethal combination.
Grilled Tuna Steak with Spring Onions and Provençal Vinaigrette
This might be the easiest recipe in the book and one you’ll pull out over and over again for its ease and deliciousness. All you need are a few good ingredients and a hot grill. When it comes to buying fresh tuna, the species, or even the bright red color, is not necessarily an indicator of quality. In fact, fatty tuna, which is more desirable, is often paler but of no lesser quality. Fresh tuna is shiny, bright, and redolent of the ocean; it should talk to you. The Provençal vinaigrette is a full-flavored condiment you’ll want to have on hand—always! Use it on everything from grilled fish to crostini and sandwiches. If you want to serve the tuna with another side dish, Sautéed Broccoli Rabe (page 192) is a good choice.
Dashi
Leftover dashi freezes well and can become a fast miso soup or used instead of water to poach vegetables or cook grains.
Roasted Chestnuts in the Fireplace
There are chestnut roasting devices—long-handled iron skillets or perforated baskets that allow the flames direct contact with the nuts—but they are not necessary; any way you can get the chestnuts in a hot fire and close to the flames works well. Chestnuts are high in moisture—more like a fruit than a nut—and fairly perishable. Look for nuts that are dark brown, shiny, and heavy and store them in the refrigerator.
