Cooked Raspberry Sauce

Here's a good base recipe for using frozen berries to prepare a flavorful sauce. I find that frozen berries need to cook a little to make them less watery and to concentrate their flavor. Look for raspberries that come frozen in a bag. Feel the bag to make sure all of the individual berries are loose and not clumped together. Bags of frozen berries tend to taste better than those frozen in a block.

Ginger Ice Milk

The lively flavor of this ice is a perfect accompaniment to fruit salad. The key to its smooth texture is making a ginger "tea," then combining it with the remaining ingredients, rather than simply incorporating pieces of ginger into the custard mixture.

Easy Chocolate Mousse

Most chocolate mousses are high in calories, but it's quite easy to make a delicious chocolate mousse that contains a fraction of the original calories and fat. The secret is to use high-quality bittersweet chocolate. It packs a strong, lively chocolate flavor and makes up for the fact that the mousse doesn’t have a quart of whipped cream in it.

Maida's Skinny Whipped Cream

When I was just starting to put some ideas together for recipes that I wanted to be included in this book, I had a conversation about lightened whipped cream with my friend and mentor Maida Heatter. She suggested that I try a recipe of hers called Cream Ooh-La-La, which she uses to top strawberries macerated with sugar and Grand Marnier, in Maida Heatter's Best Dessert Book Ever (Random House, 1990). It's basically sweetened whipped cream with the addition of some sour cream and whipped egg whites. I've transformed it a little by substituting reduced-fat sour cream and a cooked meringue. This results in a whipped cream with overtones of crème fraîhe and an exquisite lightness.

Boxty

Boxty are traditional potato pancakes that are particularly loved in the Northern counties. They can be served as a potato side dish rather than mashed or boiled potatoes or as part of an Irish Breakfast . This is my husband Isaac's take on boxty, he uses cream and not too much flour so they're good and rich.

Bacon-Fat Gingersnaps

Amazingly, the New York Times fashion critic, Cathy Horyn, is also an accomplished cook and intrepid baker. The equivalent would be if I, a food writer, were also a sleek fashion plate with a deep bench of vintage and modern pieces. This is certainly not the case, so I find her extremely impressive. She claims that these cookies are a Swedish-American tradition in her hometown of Coshocton, Ohio, but I feel they are the cookie equivalent of Paris Fashion Week: a modern, edgy take on a classic. They are truly remarkable, with a robust and smoky undertone that sets them apart from other gingersnaps.

White Bean Soup with Chive Oil

This creamy soup, served in tiny cups and bright with chive oil, is easy to make and serve. Kids will like the little cups and the crazy green swirl. Adults will appreciate the healthfulness and the flavor.

Cast-Iron Mac and Cheese

Mac and cheese can be a time-consuming proposition. My version is on the table in just about 30 minutes total. The spark for this recipe came from my friend Taryn, who casually combines ingredients without using a particular formula. She goes by feel, adding handfuls of cheese and spoonfuls of flour until the mixture feels right. Then she stirs in the cooked macaroni, pours everything into a casserole dish, and runs it under the broiler for a few minutes. The blast of heat creates an instant crust—no need for breadcrumbs. I've modified Taryn's technique to make things even easier. I prepare the cheese sauce in a large cast-iron skillet, which can safely go under the broiler. It saves on cleanup since there's no casserole dish, and the pan itself makes the dish more nutritious. That's right, cooking in cast iron will actually impart iron to food. Women and toddlers need plenty of that mineral, so it makes this quickie method downright indispensable, as far as I'm concerned. Since this recipe moves so quickly, make sure you've got everything measured and lined up on the counter before you start.

Red Leaf Salad with Roasted Beets, Oranges, and Walnuts

A&M: Teresa wrote: "Seems to me beets and oranges are a classic winter salad combination that you see everywhere." But this is no run-of-the-mill beet and orange salad. Teresa explained, "My friend Sophie's dad, Jim Broderick, gave me the idea that really makes this salad great: fennel and orange rind in the dressing." She's right: this trick gives her winter salad lift and fragrance and makes you want to keep eating it.

Pink Greens

A&M: This may be the most thoughtful sautéed greens recipe we've ever encountered. Beet greens (we agree with Marissa Grace that they deserve more attention in the kitchen) are usually wilted in hot olive oil with a little garlic, and they're delicious this way, but Marissa Grace plotted out ways to amplify the greens’ sweetness while tempering it with chiles. She has you brown garlic with shallot and red pepper flakes, then layer in sugar, black pepper, and salt before adding the greens and wilting them. Just before serving, you splash the beet greens with sherry vinegar, which electrifies the whole dish. The key here is the sugar, which caramelizes with the garlic and tightens up the sauce, so by the time the greens are cooked (and beet greens really should be cooked), it wraps them in a cloak of sweet and fiery sauce.

French "Peasant" Beets

A&M: When Amy N-B told her husband that she came up with this dish as an homage to a simple French peasant dinner, he teased her: "What peasants eat Bucheron cheese and drink Muscadet with their beets?" "Um, French ones?" Well, in our next life, we'd like to be French peasants, or at least eat like them. We have a soft spot for beet recipes that utilize both the sweet root and minerally tops. Here, Amy N-B has you caramelize slices of yellow and red beets (we used four large beets total; might do three next time) and then add a mix of beet tops and Swiss chard, cooking them just enough to wilt. You'll love the dish at this point, but you'll be riveted if you serve it with a soft Bucheron and good country bread.

Nan's Shepherd's Pie

We've perfected Tanya's English grandmother's version of a succulent mainstay. Leftovers can be reheated in the microwave, and you can even prepare the casserole a day ahead and pop it in the oven for a stress-free weekend dinner with friends.

Traditional Mead

Believed to be the oldest alcoholic drink known to mankind, mead is made by the simple fermentation of honey with spices and other flavorings. There are a bewildering number of variations and recipes for mead—including spiced mead (metheglin), fruit mead (melomel), and mead with mulberries (morat) or hops (sack)—but this is a basic home recipe. Once you have mastered the technique you can begin to experiment with your own flavors. The mead will reflect the flavor of the honey you use so bear this in mind.

Alice's Curious French Toast Bread Pudding

When­ we ­decided­ to start serving brunch, we were determined to stick with the original concept of the restaurant, "tea turned on its ear," so we racked our brains to come up with a way to do french toast that was unique, fun, and, most important, tasty! We all tossed a bunch of ideas out there, and one of them was french toast bread pudding. All heads tilted curiously at this idea, so of course we tried it. The idea was for it to be like a true bread pudding—tea-infused, of course—but when the first batch came out, our chef said, "I don't think this one is right—the top is crisp and chewy, but the bottom may be mushy." We tried it, and lo and behold, there it was, the brunch item that would make eyes widen and taste buds explode: a layer of crisp and chewy french toast on top and a wonderfully gooey, creamy bread pudding infused with apricot brandy tea underneath. Note that you will need eight 2-inch-deep oven-safe glass bowls (8-ounce ramekins or crème brûlée dishes work well).

Lavender Earl Grey Scones

This ­is ­one of Haley's favorites, not only because she's an Earl Grey drinker (in fact, as a bitty child she would ask the waitresses in diners if the tea was Earl Grey or orange pekoe because she "simply wouldn't drink anything but Earl Grey"—precocious much?) but also because the hint of lavender infusion leaves you feeling as if you ate a scone and then walked through a field en Provence!

Pumpkin Scones

Ah, the pumpkin scone. The most discussed and praised scone on the planet. In all honesty, this scone was a happy accident of sorts. for Thanksgiving 2003, our baker, Sue McClinton, had the idea of making a pumpkin scone instead of a pumpkin cheesecake, and because of its popularity (and the fact that Haley has to have one every day), we kept it on through Christmas that year. Once the holidays were over and the mistletoe un-hung, Sue moved on to another type of scone, and all- but-rioting broke out that week when patrons discovered that there were no pumpkin scones. We heard the message loud and clear and have had pumpkin scones on the menu every day since then. In fact, pumpkin became our staple scone well before the standard and expected buttermilk scone entered our daily repertoire! Moist, slightly spicy, definitely gooey, and sweet on top (think of pumpkin pie inside a scone and you get the idea), the pumpkin scone remains a major favorite, and Haley—and now her kids— continues to have one almost each day! (In fact, Haley's son, Maddan, constantly begs to take one to school for a snack.)
These scones are best when served warm, but if you aren't serving them right away, we recommend that you don't glaze them until shortly before you serve them.

Peachy Keen Chicken

Although the recipe calls for boneless skinless breasts, you can use chicken tenders or a cut-up chicken with skin, but the cooking time will vary (see Cook's Note). If you want to use fresh or frozen sliced peaches instead of canned, add 2 tablespoons honey to the marinade. Grilled pitted fresh peach or nectarine halves are great alongside. Serve with potatoes and a crisp green salad. Any leftover sliced chicken is great on a sandwich with a little lettuce, honey mustard, and peach jam.

D is for Delicious Baby Cereal

Here is a good basic cereal. As baby gets a little older, you can add a few things to the cereal such as a tablespoon of banana puree. You can make this ahead and refrigerate it for a day or two—at most—or simply have the rice, barley, or oatmeal ground and ready to go.
