Brunch

Russian Walnut-Cherry Latkes with Cherry-Apple Sauce

The sauce for these cheese-based latkes, which are great for breakfast, can be made two days ahead. Be sure to serve the pancakes (enough for four people) as soon as they are made.

Parsley-Almond Pesto

Here's a versatile pesto. It's great with goat cheese as an appetizer, mixed with balsamic vinegar as a vinaigrette, spread on sandwiches, tossed with steamed carrots, or mixed with a little cream and chicken broth and served over pasta.

Vegetable Kebabs with Mustard Basting Sauce

Can be prepared in 45 minutes or less but requires additional unattended time.

Pears Poached in Tequila with Prickly Pear-Raspberry Sauce

For a light alternative to traditional Thanksgiving pies, tequila-poached pears (above) provide a southwestern twist. Popular in Mexico and Central and South America, prickly pear jelly is paired with raspberries for the sauce. Serve with the Lemon Bizcochitos and dessert wine, such as Muscat.

Cabbage-Caraway Quiche

Beet salad is delicious alongside. Rewarm leftovers for lunch the next day.

Caviar Dream with Endive and Baby Potatoes

A creamy sauce and a trio of caviars are the "dream" of this party dish. Buy the quality and quantity of caviar that fit your budget.

Salmon Roe Omelets with Scallion Potatoes

Can be prepared in 45 minutes or less.

Spiced Two-Grain Pancakes

Can be prepared in 45 minutes or less.

Savory Grits with Shallots, Corn and Green Onions

A quick and easy side dish that goes well with roast chicken, turkey or pork chops.

Stuffed Eggs with Vinegar Sauce on Toast

Can be prepared in 45 minutes or less.

Stir-Fried Red Flannel Hash

Stir-frying--an unorthodox technique for red flannel hash--yields a dish whose components are crisp and separate rather than melded into a cake, as is traditional. Can be prepared in 45 minutes or less.

The Delicious Omelette

A bit of water whisked into the eggs tenderizes them. You may fill this omelette with anything you like, of course. It makes two very generous servings. For the mushroom and goat cheese variation, sauté 1 pound of thickly sliced mushrooms in 2 tablespoons unsalted butter until they are golden and most of their liquid has evaporated. Use about 4 ounces fresh goat cheese, and 1/2 cup of chervil sprigs (you may substitute flat-leaf parsley), which you mince at the very last minute, to take advantage of their flavorful oils.

Caramelized Nectarine-Almond Phyllo Cups with Frozen Orange Mousse

This lovely finale is from Dwayne Fortier of La Reserve in Houston. Begin preparing it well before serving, as the mousse needs to freeze for at least six hours.

Warm Fruit Compote with Lemon Verbena and Crème Fraîche

The thing Hom likes most about this dessert is the contrast of the warm, sweet fruit and the cold, tangy crème fraîche. Active time: 15 min Start to finish: 20 min

Parmesan Puffs

Can be prepared in 45 minutes or less.
