Fire-Roasted Tomato Salsa
Our chef Eddy developed this recipe based on the salsa he grew up with in Mexico City. It’s a favorite among our customers, especially at the height of summer when the tomatoes and peppers come from our own mini-farm. I love to spoon it over fried eggs after a late night of drinking, but it’s also perfect for picnicking or just snacking. For a milder salsa, remove the seeds from the jalapeño before roasting it.
Summer Corn and Tomato Salad
This colorful and refreshing salad is one of the most eagerly anticipated items in our deli case. We don’t start making it until the tomatoes are really ripe and the corn is sweet and abundant. Because the ingredients are fairly sturdy, this salad holds up for quite a while after you make it. It’s a great candidate for bringing to a picnic or barbecue, and it’s the perfect side for a burger! It’s also nice as a salsa or spooned onto a grilled fish fillet.
Delfina’s Spaghetti
Delfina is one of my favorite restaurants in San Francisco, and it happens to be just two doors down from the Market! Although much of their menu changes daily, this spaghetti is always on offer, and I think it’s one of the best things they make. It’s a great example of how a few high-quality ingredients (most of them pantry items) can come together for a simple but nourishing meal. Chef-owner Craig Stoll was generous enough to share his recipe. Craig employs the classical Italian technique of par-cooking the pasta and then finishing the cooking with the sauce. This not only thickens the sauce but also lets the sauce cook into the pasta. He says, “The result should be juicy and shiny and full of flavor, but with no residual sauce. All of the sauce should be contained within the body of the spaghetti. The last bite of pasta should bring the last bit of sauce with it.”
Romesco Sauce
This incredible sauce is particularly versatile and serves as the backbone for the Romesco Chicken Salad on page 187. It’s important to avoid overprocessing the sauce; not only does heat cause the mixture to become gelatinous, but the sauce simply tastes better when left a little chunky. If you can’t find piquillo peppers, roasted red bell peppers would work, too. Roasting and peeling them yourself is the ideal, because it gives you more of that nice smoky flavor.
Summer Vegetable Stew with Oregano and Chiles
A spicy vegetable side dish from Chef Jon Mortimer, a 2007 Workshop participant, inspired this more substantial stew. By adding more summer vegetables, such as chayote and corn, Brian elevated Chef Mortimer’s dish to entrée status. Prepared with vegetable stock, it is suitable for vegetarians.
Blistered Cherry Tomatoes
This five-minute side dish would complement any fish or meat from the grill, from swordfish to pork chops. Save the recipe for summer, when the cherry tomatoes have thin skins and you can find them in a rainbow of colors—red, gold, yellow, and green—at a farmers’ market.
Summer Bean Stew with Pancetta
With names like Good Mother Stallard, Goat’s Eye, and Yellow Indian Woman, the dried heirloom beans from Rancho Gordo (see page 55) charm diners familiar with only generic dried beans. Rancho Gordo proprietor Steve Sando finds some of these intriguing beans in Mexico and Central America and arranges to buy them direct from the farmers. Others are grown on farms in Northern California. You can use a single bean type for this dish, but Brian prefers to use multiple varieties, simmering them separately to accommodate their different cooking times. Just before serving, he unites them with a tomato sauce and some blanched fresh yellow and green beans. You could make a meal of this summer stew with a green salad and some crusty bread, or serve it as an accompaniment to grilled lamb. Note that the beans must soak overnight.
Lamb Meatballs in Tomato Sauce with Sweet Peppers, Capers, and Green Olives
Lamb shoulder makes luscious meatballs because the ground meat has sufficient fat. It stays moist, even when reheated, so you can make the dish hours ahead. Brian sometimes makes miniature lamb meatballs to serve to visitors who participate in the winery’s Wine and Food Pairing Experience. In this larger size, the meatballs look and taste as if they were made by an Italian grandmother. Pair with pasta or white beans.
Short Ribs Braised with Red Wine and Ancho Chiles
Ancho chiles have an earthy, rich, raisiny flavor that adds depth to the sauce for these short ribs. The chiles are not particularly spicy, so the dish still works well with red wine. In fact, we serve a variation of this recipe in our Wine and Food Pairing Experience for winery visitors, pulling the short-rib meat from the bones and serving it on mini hamburger buns with coleslaw. For a dinner entrée, we serve the braised short ribs on the bone, as described here, with mashed potatoes or noodles.
Pancetta-Wrapped Pork Tenderloin with Tomato Fondue
Our charcuterie supplier, Taylor Boetticher of Napa’s Fatted Calf (opposite page), had the fine idea to wrap a pork tenderloin in a cloak of paper-thin pancetta. The pancetta bastes the lean tenderloin as it cooks, so the meat remains moist. A thyme-scented tomato fondue makes a light, summery accompaniment, suggested by 2009 Workshop participant Scott Gottlich. Add some sautéed Blue Lake beans or a slice of Mediterranean Summer Vegetable Gratin (page 158) to complete the plate. You can roast only one tenderloin, if you like, but you may need to reduce the heat as you sear it because of the reduced volume of meat in the skillet. Do prepare the full amount of tomato fondue, however. You won’t have enough volume for the blender otherwise, and you won’t regret having extra. Note that the pork needs to marinate overnight.
Roast Halibut with Chorizo and Spicy Tomato Broth
Seasoned with chorizo, dried oregano, and cilantro, this deconstructed fish stew tastes like the specialty of some upscale restaurant in Mexico City. But it came to Cakebread Cellars from one of Denver’s foremost chefs, Kevin Taylor, a 1997 Workshop participant. For a dinner party, you can make the tomato broth a couple of hours ahead, stopping after you add the cooked chorizo and potatoes. Then all you need to do at dinner time is steam the fish on this flavorful base. You could add some clams or shrimp to the pot as well.
Shellfish and Chorizo Paella
Brian teaches a paella class at the winery occasionally to help take the fear out of preparing rice the Spanish way. It’s a great dish for parties because guests love watching paella come together, the flavors and fragrance building as ingredients are added. Brian cooks his paella by the traditional method, outdoors over a hardwood fire. Gauging the heat of the fire is the only challenge; if it is too hot, the rice will scorch. Be sure to let the coals burn down until they are well covered with white ash before starting. And if you still lack confidence after trying this recipe, sign up for the class. Paella tastes best warm, not hot, so allow for some cooling time.
Rigatoni with Eggplant, Italian Sausage, and Tomato
When Jody Denton participated in the 2006 Workshop, he made delicate ricotta gnocchi in a sauce similar to the one outlined here. Chef Denton used wild boar sausage from Broken Arrow Ranch (see page 144), our longtime game supplier, but Italian pork sausage is a more readily available substitute. It takes practice to master gnocchi, but Chef Denton’s delicious sauce is just as appealing with rigatoni.
Grilled Pizza with Summer Squash, Cherry Tomatoes, and Fresh Mozzarella
It takes a little more attention to grill a pizza than to bake one, but the smoky touch of the grill is appealing—the next best thing to baking in a wood-fired oven. When Brian teaches pizza classes at the winery in summer, he demonstrates the grilling technique because so few people have a wood oven at home. The trick is to start the pizza crust in a hot zone to set it, and then flip it and move it to a cooler zone to add the topping and finish cooking. This topping is vegetarian, but you could add some crumbled sausage or pancetta, if you like.
Soft Tacos with Chipotle-Braised Rabbit, Black Beans, and Pickled Cabbage
On the first morning of the Workshop, participants rise early to pick grapes before the temperature soars. These chefs may labor in hot kitchens every day, but on grape-harvest day, they learn what real work is like. By midday, they are famished. We keep lunch casual, knowing that a big dinner will follow. Typically, we serve Mexican food, like these soft tacos, with from-scratch tortillas prepared outdoors on a comal (Mexican griddle) by winery staffers Brenda Godinez and Virginia Barrera. Rubaiyat, a blend of red varieties, is perfect for the occasion. Note that the beans need to soak overnight.
Indian Lentil Soup
As Cakebread Cellars expanded sales overseas, we began inviting chefs from abroad to participate in the Workshop. Predictably, some new and intriguing scents soon emerged from our kitchen. This warmly spiced lentil soup is Brian’s invention, but he devised it after working with Indian chef Sujan Mukherjee at the 2008 Workshop and observing his spicing. Now Brian makes this wholesome soup with the Napa elementary school students that he teaches regularly, and he demonstrates the recipe at our employees’ wellness classes.
Heirloom Tomato Salad with Roasted-Garlic Vinaigrette and Chèvre-Stuffed Piquillo Peppers
The Workshop coincides with sweet pepper season, and many chefs are seduced by the varieties they find in our garden. Chef Donald Barickman, a 2000 Workshop participant, succumbed to the small, sweet ‘Lipstick’ peppers—so named for their crimson color—which he roasted and stuffed with creamy goat cheese and served with arugula and roasted-garlic vinaigrette. Bottled Spanish piquillo peppers make a good substitute. Brian adds heirloom tomatoes to make a more substantial composed salad for the end of summer. Serve it before or alongside grilled lamb, sausage, or burgers.
Watermelon and Tomato Gazpacho
At the 2001 Workshop, Chef Ken Vedrinski astonished guests with a “consommé” made from the strained juice of tomatoes and watermelon. Preparing the dish involved hanging the pureed fruits in a muslin bag overnight to collect the clear, sweet juices—a procedure that might deter many home cooks. Riffing on Chef Vedrinski’s idea, Brian created an easier gazpacho that blends tomato, watermelon, and other summer vegetables so seamlessly that you can’t decipher the contents. The result is a refreshing and original adaptation of the familiar Spanish soup.
Fried Green Tomatoes with Goat Cheese and Fennel Marmalade
By mid-November, the tomato vines in our garden have usually had enough. The days are no longer sufficiently warm to ripen the fruits that remain on the plants, so we start thinking about fried green tomatoes. Southerners might raise their eyebrows, but Brian uses neither cornmeal nor bacon fat when he makes these. He prefers the lightness of vegetable oil and the crispness of a panko coating. These coarse Japanese bread crumbs are a favorite of many chefs because they produce such a crunchy and well-browned exterior. Brian tops the fried tomatoes with a dollop of softened goat cheese from Skyhill Farms and a spoonful of fennel marmalade. The dish offers so many pleasing contrasts: warm and cool, tart and sweet, crisp and creamy. We typically serve it as a passed hors d’oeuvre with our Sauvignon Blanc, which has the bright acidity to match.
