Fruit Soufflé Omelette
This is a classic French preparation that is easy to prepare and quite light. Once you have mastered the base, you can add any fruit that you have on hand. It is a great brunch dish since it is not quite an entrée nor is it sweet enough to be a dessert. One omelette is just enough for two people, and since I think that it is almost impossible to make an attractive omelette large enough to feed six, it is best to make one recipe at a time when feeding more than two people. You can keep the finished omelettes warm in a preheated 300° oven while you make the necessary number.

Lime, Apricot, and Soy-Sauce Chicken Wings
These sweet, tangy wings should appeal to even the pickiest kid. Eight pounds may sound like a lot, but no matter how many of these we made in our test kitchens, they always disappeared quickly. You may not have the oven space to cook the wings and the macaroni simultaneously. We found it best to do the wings first, then keep them warm under foil while baking the macaroni. Finally, because the wings tend to leave a mess to clean up, we like to make them in disposable foil roasting pans.
Tropical Fruit with Rum and Lime
Look for ripe mangoes that are slightly soft to the touch. To evoke the tropics even more, serve the fruit with coconut macaroons or macadamia nut cookies.
