Pastel de Tres Leches
Pastel de tres leches is a traditional Nicaraguan Celebration Cake usually reserved for the holiday season. In this recipe we preserve the traditional presentation, and add some typical American holiday flavors.
The cake is composed of four components: Sponge Cake, Rum Milk Syrup, Meringue, and Cranberry Compote.

Walnut Tarragon Bulgur

Halvah
Jews from Persia (present-day Iran) are especially proud of Queen Esther's role in the holiday of Purim. A favorite dish of Iranian children is halvah, which they eat after they break the fast of Esther, observed on Adar 13. At nursery school, Merissa learned this recipe for halvah from an Iranian teacher. In between tastes, the children played with Esther and Ahasuerus marionettes they had made with the help of their teacher.

Some cooks may prefer the convenience of substituting dried egg whites for the fresh ones called for in the following recipe. (This will eliminate having to find a use for the yolks.) Dried egg whites are increasingly available in supermarkets or by mail order. Here, you will need 1/4 cup dried egg whites, reconstituted by stirring 3/4 cup lukewarm water into them as package instructions indicate.

Maytag Blue Cheese Souffles with Black Corinth Grapes and Muscat Grape Reduction
At the restaurant Charlie Trotter bakes these small soufflés in thimble-shaped molds and sets them atop rounds of his own dried-fig brioche. Although he likes to use white Muscat grapes for the sauce, the recipe works well with any color or variety of grape. We used red seedless grapes, and they yielded a beautiful dark-pink sauce.
