Atole de Piña
These nourishing atoles — fruit-flavored drinks thickened with corn tortilla flour — are served much like hot chocolate. They are warming on cold mornings or evenings.
Black Bean and Sweet Potato Stew with Chilies and Polenta Triangles
Here, sautéed polenta triangles add another dimension to a southwestern-style stew.

Bulgur, Cucumber, Dill and Mint Salad
Heres a cool combination thats excellent with salmon. Because the bulgur is not cooked, it needs to sit overnight in the dressing to soften, so begin preparing it a day ahead.
Golden Granola
Sue Ellison of Edgewater, Colorado, writes: "Although I play guitar and piano, and have worked for more than 20 years as an elementary-school music teacher, at this point music is just my job; cooking is my passion. It's an interest I share with my daughter, Hannah. We do a phenomenal amount of cooking together. In fact, I think she learned how to count using chocolate chips, standing on a stool next to me at the kitchen counter while I baked chocolate croissants."
Roasted pine nuts add a southwestern accent to this lightly sweetened granola. Once the granola has cooled, leave it in large chunks for a snack or crumble it into bits for a cereal topping. Either way, it will keep up to one week if stored airtight.

Jasmine Rice Cracker
The rice grains puff slightly during frying, making these crackers wonderfully light and crunchy. They are also a great alternative to croutons on soups as well as salads.

Smoked Turkey Paella Salad
This recipe can be prepared in 45 minutes or less.
Start the meal with gazpacho, then offer crusty bread, marinated green and black olives, and sangria with the salad. End with raspberries atop vanilla custards.
Bay Scallops with Polenta, Wild Mushrooms, Sherry, and Parsley Bread Crumbs
Chef Suzanne Goin prepares this dish with Taylor Bay Scallops in the shell, but it's also delicious with regular bay scallops, which are more widely available. Be sure to use a good amontillado, the medium-dry Sherry that is lightly aged to give it a mellow, nutty flavor. What to drink: Condrieu, an aromatic Rhône white made with Viognier grapes.
Rice Pudding Cake with Cherry-Apricot Compote
(TORTA DI RISO CON COMPOSTA DI CILIEGE E ALBICOCCHE)
This flourless dessert is popular, especially on the Po River plain. The texture is more like that of a rice pudding than that of a cake. The compote is a refreshing partner. For a treat, uncork a semisweet Lambrusco.
