Apple Spice Cake with Walnuts and Currants
A high proportion of butter makes for an extra-smooth and rich icing. For best results, use Philadelphia-brand cream cheese.
Lora Brody's Rugelach
These are, without a doubt, the best rugelach I've ever tasted, and, to my mind, there is no point whatsoever in improving on perfection. From my friend Lora's wonderful book Cooking with Memories, this recipe was passed down to her from her mother.
One of the reasons these rugelach are so special is that the dough itself contains a little sugar, making it softer and more cozy and buttery than the usual. Then there is the extra zing of tartness from the apricot preserves and the sweet, sharp sting of lots of plump golden raisins. As I mentioned, perfection! As Lora warns: "Beware, you can't eat just one!"

Eccles Cakes
Michael P. Hooley of San Francisco, California, writes: "While I was in London, I went to Fortnum & Mason and had a delicious currant-filled pastry called an Eccles cake. Would it be possible to get the recipe?"
These sweet pastries are named after the town in Lancashire where they originated.
Quick Chicken and Olive Empañadas
These crisp turnovers are traditionally enclosed in pastry dough. Making and rolling out the dough can be quite time-consuming, so potsticker wrappers are used in this recipe instead.

Linda Bladholm's South American friend Lilian Zamorano gave us the recipe for this unusual but very tasty dessert. It's made with the ancient Peruvian grain quinoa, which is a common side dish at Peruvian restaurants.

Sticky Toffee Pudding
"I have never had a better dessert than the sticky toffee pudding at Beginish Restaurant in Dingle, Ireland," writes Judith Gilbard of Forest Hills, New York. "I hadn’t heard of the restaurant before this visit, so I was pleased to stumble across such a find. Do you think the owners, John and Pat Moore, would share their recipe?"
At the restaurant, this dessert is served with a scoop of vanilla ice cream.
Chopped Salad with Chicken, Couscous, and Vegetables
"During a vacation in Scottsdale, Arizona, my brother-in-law took me to his favorite restaurant, Cowboy Ciao," writes Linden Avery of Oklahoma City, Oklahoma. "It serves a very colorful, delicious chopped salad called a Stetson. Could you get the recipe so I can re-create it at home?"
This main-course salad is presented with the ingredients lined up in rows. For convenience, you could just toss the salad instead.

Great One Pot Vegetables
I leave the roots on the leeks until after cooking, so they don't fall apart. Just wash and trim beforehand.

Coconut, lemon rind, and raisins are a bright surprise. "A lot of people buy my cookbook just to get this recipe," says Mrs. Wilkes.
