Serve with rice or as a burrito filling.

Chicken Vesuvio

Jerry Goldberg of Chicago says,"After a Cubs game at Wrigley Field, I drove over to Harry Caray’s restaurant to celebrate the victory—and the team’s late announcer. The hearty chicken with potatoes was almost as memorable as Caray’s singing of 'Take Me Out to the Ballgame,' which was his seventh-inning tradition."

Lemon-Sage Cornish Game Hens with Tomato-Porcini Sauce

Robust ingredients and an elegant presentation: This dish captures all the romance of winter fireside dining. Break out a bottle of good Chianti to pour with supper.

Curried Chicken

Serve the curry with steamed white rice and Indian beer, and make a stop at an Indian restaurant to get some samosas — savory filled pastries — to pass as appetizers, and the flatbread called naan to sop up the curry sauce. For dessert, how about assorted teas and a carrot cake?

Chicken Paillards with Radish-Mint Chutney

Stir-fried Sugar Snap Peas and Cherry Tomatoes and buttered couscous are great sides. Round out the meal with sugared strawberries and toasted pound cake.

Cornish Game Hen with Curried Plum Glaze

Jason Gareffa of Los Angeles, California, writes: "Pursuing a career in acting keeps me tremendously busy. Between my improv comedy classes, performances, auditions for film and television roles, and gigs as a DJ for weddings, I don't have a lot of extra time on my hands. But good food is important to me, especially since I need a lot of energy to stay on the go. So over the years, I've started experimenting in the kitchen. Now the other members of my improv group even like to come to my 'wrap parties' to taste my creations." Serve basmati rice (or regular white rice) on the side to complement the Indian flavors.

Moroccan-Spiced Chicken Tagine

Kathy Lee, Valley Center, Calif.
If you can't find a package of thighs at the market, buy whole chickens. You (or the butcher) can cut up the chickens and freeze the leftover pieces for another use.

Mountain-Style Paella

About two centuries ago, field workers near Valencia began sharing a luncheon dish made of rice, vegetables, snails and eels cooked in a flat, oval, two-handled metal pan known as a paellera. And so paella was born.
Rice dishes made in such a pan, whatever the ingredients, are called paella or just arroz con ("rice with"), followed by a description of the contents. The traditional components of this particular version are snails, rabbit and rosemary, which are found in the Valencian mountains.
This equally delectable rendition omits the snails and substitutes chicken for rabbit.
This recipe can be made in a paella pan, a flameproof earthenware casserole or a large skillet.
