Salade Verte

Active time: 45 min Start to finish: 45 min We created this recipe using Louis P. De Gouy's article on green salad and agree with the quote he includes from Fred Allen: "A salad should be dressed like Dorothy Lamour — adequate but lightly."

Zucchini and Spinach Frittata

This frittata is a marriage of ideas gleaned from two similar dishes tasted in the Piedmont: a delicious zucchini and herb "frittela" at the restaurant Guido in Costiglioli d'Asti and a spinach "frittatini" (both were miniature frittate) at the humble but superb Osteria dell'Unione in Treiso.

Peppercorn, Mustard and Dill Vinegar

Typical Danish ingredients are featured in this easy-to-make condiment; it would be wonderful incorporated into a vinaigrette for cold poached salmon.

Potage Saint-Germain Gerhard

Pan Fried Celery Root, Potato, and Goat Cheese Terrine

Great as an appetizer or a light lunch dish.

Polonaise Topping for Asparagus

Can be prepared in 45 minutes or less.

Chicken Liver and Red Pepper Spiedini

Forget the usual chopped liver. This rustic appetizer is an Italian treat. Spiedini are skewers of any combination of foods — bread, cheeses, meatballs, fish — that can be grilled or roasted.

Panna Cotta

Berry Napoleons

Elegance doesn't come any easier than this treat made with purchased puff pastry.

Toasted Baguette with Tomatoes and Anchovies

Originally from Catalonia, a region in northern Spain that surrounds the city of Barcelona, this appetizer is now found all over the country. If not serving immediately, pass the toppings on the side so that the bread doesn't get soggy.

Quick Pickled Cucumbers

After lingonberry preserves, these pickled cucumbers are the most popular condiment in Scandinavia. They are a traditional accompaniment to Swedish Meatballs, simple salmon dishes, and roasts and other meats. They are even served with frankfurters sold at street kiosks, much like the sauerkraut that often tops the hot dogs sold here.

Artichokes Stuffed with Pancetta and Parsley

(Carciofi Ritti) The best artichokes in Tuscany are the small purple ones that come from the area around Grosseto, a southern city near the sea. But the variety is endless: big ones, little ones, violet ones; served boiled, steamed, even raw. In this dish, which is an interpretation of a classic Florentine recipe, artichokes are filled with a savory mixture of pancetta and parsley, drizzled with olive oil, and braised.

Choucroute au Champagne

Choucroute is traditionally cooked in champagne but if you wish to be more economical you can cook it in white wine and add a split or two of champagne at the table.

Chez Gladines' Basque-Style Scrambled Eggs

This Basque specialty consists of scrambled eggs garnished with tomatoes, peppers, onions, and a slice of ham. The same Basquaise garnish may be prepared in advance and used for chicken and fish. Chez Gladines serves its pipérade with patates sautées — potatoes pan-fried in duck fat and seasoned with garlic and parsley.

Monique's Cornichons

This recipe was given to me by one of my favorite farmers at my local market in Louviers, Normandy.

Herbed-Cheese and Zucchini Omelet

If you enjoy spicy food, pass some hot pepper sauce to sprinkle on top of this light, soufflé-like omelet.

Pear and Currant Streusel Rounds

Baked in individual ring molds, these little desserts feature caramelized pears, streusel topping and sweetened cream.
