Shoe String Potatoes (Pommes Pailles)
A mountain of skinny, crisp fries adds drama to the plate. Unlike thick-cut fries, which are traditionally fried twice (first to cook them through and then to crisp them), shoestrings are fried only once. And like potato chips, they taste great at any temperature.
Pan-Seared Rib-Eye Steak with Béarnaise (Entrecôte Béarnaise)
Tricked out with shoestring fries, this is a time-honored rendition of steak frites—meat and potatoes à la française. A rich sauce on the side enhances the already flavorful well-marbled meat.
Seared Scallops with Tarragon-Butter Sauce
Beurre blanc—the classic French butter sauce—is a cinch to prepare and has a tendency to make just about anything taste better. This take on it uses the scallops' juices to add complexity.
Roasted Chicken with Dijon Sauce
Adding Dijon to this sauce lends not only a nice kick but also body and richness—without resorting to lots of cream and butter (a shocking idea in an issue that sings the praises of French food, we know).
Saffron Rouille
Rich, aromatic rouille is a classic lily-gilding for French fish soups; this one has an extra something special: saffron. Even if you love saffron, though, don't be tempted to add any extra threads. This is just the right amount to really flatter, not dominate, the soup.
Pear and Almond Tart
Eau-de-vie, or fruit brandy, an Alsatian specialty, is used to great effect in this dish, bringing out the subtle nuances in the pears. A custardy, brandied layer over the tender fruit, along with a nutty topping, gives this tart a complex yet homey air.
Blade Steaks with Mushroom-Madeira Sauce
An almost mystical combination beloved in France, mushrooms and fortified wines like Madeira elevate everything they touch. The results are exceptionally fine when you put their magic to work on great-tasting (and inexpensive) blade steaks.
Chicken in Riesling
Though coq au vin made with red wine is perhaps the best-known incarnation of the French dish in this country, most regions of France have unique versions that take advantage of local wines. Alsace's dry Riesling lends a gentle richness to this creamy, comforting meal.
Limoncello Tiramisu (Tiramisu al Limoncello)
Though Treviso is recognized as the birthplace of tiramisù, the precise origins of this phenomenally popular dessert are shrouded in mystery. Imagine my excitement, then, when my friend Celeste Tonon, proprietor of Ristorante da Celeste, passed on to me the original procedures for making this luscious assemblage of ladyfingers (savoiardi) and Mascarpone cream, which Celeste learned from his mentor Speranza Garatti, the true mother of tiramisù, he claims. Her creation was made and served in individual portions, in a goblet or coppa, which I suspect gave rise to its name, which means "pick me up" in the Venetian dialect.
One of the delights of making tiramisù is its versatility. This recipe makes a family-style dessert in a large dish, but you can easily compose single servings in dessert glasses, wine goblets, or even elegant teacups for a more impressive presentation, in the style of Signora Garatti's original "coppa imperiale." And while the conventional version of tiramisù calls for espresso-soaked savoiardi, I've found that other flavors can be incorporated into the dessert with great success. Here, the brightness of fresh lemons and limoncello liqueur lace the cream and soaking syrup to make for a tiramisù that is refreshing and irresistible.
Braised Artichokes with Pecorino (Carciofi al Tegame)
Here is a quick and tasty way to cook young artichokes: thin-sliced, slowly braised in a skillet in their own juices, and served with a shower of soft pecorino. The method is simple, and will yield delicious results even with the larger, more mature artichokes you'll find in the supermarket.
This dish makes a great vegetarian sandwich, or, for a carnivore, a topping for a juicy hamburger. Artichokes prepared this way are also a great appetizer topped with a poached egg or a thin slice of prosciutto.
Roasted Lamb Shoulder (Agnello de Latte Arrosto)
Everybody is familiar with lamb chops and leg of lamb—but how about the shoulder? When is that used? Well, here I give you the recipe for a roasted lamb shoulder—and you will see why it is my favorite cut for roasting. The meat is sweeter on the blade bone, and, with lots of cartilage to melt during roasting, the meat is finger-sticking good. You might not get a clean, precise cut of meat from the shoulder, but it will be delicious.
Scallion and Asparagus Salad
This is a great spring salad with two long, lovely green vegetables that have a real affinity for each other. It is delicious as an antipasto or a first course, or as a side dish to grilled meat and fish.
You can serve this salad chilled, but I like it at room temperature.
If you haven't poached scallions before, be sure to note how nicely it brings out the flavors in a mellow way.
Bouillabaisse, Simplified
You don't need to get fancy with bouillabaisse. This version of the French fisherman's stew liberates you from having to buy up the entire fish counter—just choose any two or three of the fish and shellfish options listed below.
Rhubarb and Raspberry Jam Roly-Poly with Vanilla Custard Sauce
A roly-poly is a traditional British dessert similar to an American jelly roll. In this version, the scone-like pastry is spread with tangysweet raspberry and rhubarb jam, then baked.
Sicilian-Style Potato Gratin
Capers, a common ingredient in traditional Sicilian cooking, give this gratin a tangy, briny flavor. Serve alongside whole roasted fish, roast pork, or sautéed chicken breasts.
Corned Beef Hash with Poached Eggs
Comfort food at its best. This hash is great for breakfast, brunch, or even dinner. Use one or two eggs per person. The eggs can be partially poached up to one hour ahead and then finished a couple of minutes before serving.
Homemade Irish Corned Beef and Vegetables
Spicy horseradish cream and malty Guinness mustard amp up the flavor of this home-corned beef. You might need to special-order the brisket from your butcher, and you'll have to start brining the meat eight days before you cook and serve it. The Insta Cure No. 1 is optional, but it's nice to use because it gives the meat its traditional pink color. Save the leftover corned beef and vegetables for the sandwiches and hash.
