Salad

Ginger Salad

Gin Thoke This salad is pungent, crunchy, intriguing, and addictive. Although served as a dessert in Myanmar, it is also a great accompaniment to grilled fish, chicken, or steak.

Arugula and Pear Salad with Mascarpone and Toasted Walnuts

This salad was inspired by one we had in Rome that was made with Stracchino cheese, but we've used mascarpone, which makes an admirable and accessible substitute. (Stracchino, a springtime cheese, is difficult to find here, even in season.) Active time: 25 min Start to finish: 25 min

Endive and Radicchio Salad

Pickled Cucumber, Squash, and Red Pepper Salad

Can be prepared in 45 minutes or less, but requires additional unattended time.

Radicchio, Red Cabbage and Tomatoes with Orange Vinaigrette

For a prettier salad, we used two varieties of radicchio — the common Verona, with red leaves and white ribs, and Treviso, which can range from pink to red and has narrower, pointed leaves.

Peppered Chicken, Pineapple and Arugula Salad

Bottled vinaigrette adds a tangy twist to the chicken. This stylish dish goes well with couscous. Molasses cookies and vanilla ice cream sprinkled with chopped crystallized ginger would be a lovely finish.

Beet and Endive Salad

Use canned beets to cut the preparation time of this colorful salad.

Mango-Lime Salad

This recipe is an accompaniment for Vanilla-Bean Cheesecake with Guava Topping .

Gingered Apple Slaw

Active time: 20 min Start to finish: 20 min

French Potato Salad

Hold the mayo: This rustic side dish is dressed with a Provence-inspired blend of white wine, Dijon mustard and capers. Be sure the potatoes are still warm when you add them to the dressing; they’ll absorb it better, enhancing the flavor of the dish.

Caesar Dip with Crudites

Over the Fourth of July weekend in 1924, a group of unexpected guests arrived at Caesar’s Palace restaurant in Tijuana, Mexico. Running low on food, the owner, Caesar Cardini, threw together a salad with ingredients he had on hand. He made a thick dressing with a coddled egg, garlic-flavored oil, lemon juice, grated cheese and Worcestershire, which added a taste of anchovy. This dip has all the flavors of that first Caesar salad, and romaine lettuce and fresh veggies are nice “dippers.”

Spinach with Pine Nuts and Raisins

(Spinaci con Pinoli e Passerine) Spinach with pine nuts and raisins is a classic Sephardic dish that appears on tables in Greece, Spain, Turkey, and Italy, where it is a staple on Venetian and Genoese menus. It is a perfect accompaniment to delicate fish or poultry dishes and is often served at room temperature.

Massimo's "Farinella"

(Grain and Tomato Salad) One summer my husband, Massimo, and I vacationed with our son, Max, near Lucca, about an hour from Florence. There we discovered a local specialty, farro, an ancient grain (emmer, often called spelt, in English) similar to barley, traditionally used in bean soup there. We bought lots of it, and Massimo then made a salad based on panzanella but substituting the boiled farro, for soaked and squeezed bread — a terrific idea that has become a warm-weather favorite.
