Salad

Shrimp Louis

A new version of the crab classic, this shrimp salad is great for lunch or dinner. Serve it with artisanal breads like walnut, olive or roasted garlic; then complete the meal with angel food cake, whipped cream and fresh raspberries.

Soy-Ginger Beef and Noodle Salad with Peanut Dressing

Freezing the steak for about 30 minutes makes it much easier to slice; using a grill pan is the simplest way to cook the slices.

Chopped Spinach with Toasted Sesame Seeds

Using a salad spinner makes short work of washing fresh spinach, which usually requires several changes of water. Start by filling the spinner bowl with water. Then fill the basket with spinach, submerge it in the water, and stir the spinach to release dirt. Lift the basket out and repeat with fresh water.

Thai-Style Beef Salad

You can make the salad with roast chicken if you prefer. Offer purchased sesame noodles as an accompaniment. For dessert, serve sugared sliced plums, topped with vanilla ice cream and chopped crystallized ginger. Look for the Thai fish sauce in the Asian foods section of the supermarket.

Mediterranean Roasted Vegetable Salad

Broiled eggplant, roasted red onions, potatoes, bell peppers and zucchini are tossed with radicchio, arugula and a tangy mustard vinaigrette in this colorful salad. A sprinkling of freshly grated Pecorino Romano cheese is the finishing touch.

Chinese Noodle and Chicken or Turkey Salad

Leftover roasted chicken or turkey makes this rendition of a popular salad a snap to prepare. It's made spicy by combining chilies with linguine, green onions, snow peas, cilantro and a peanut dressing.

Spicy Chicken Salad with Bell Pepper and Cilantro

Use leftover cooked chicken, or buy a cooked chicken at the market or a take-out place. Serve the salad with warm tortillas, or try the chicken mixture (without the lettuce) as a sandwich filling.

Molded Jell-O Salad

This recipe is from my favorite grandmother, DeeDee. According to my mother, it has many variations, and my grandmother always served it with great presentation at parties, family dinners, and ladies luncheons. The recipe has high stakes: You get but one chance when you unmold it. Just recently I recall overhearing my mother exclaim "Damn!" as she was getting the salad ready for yet another meal. It was runny — not enough time in the refrigerator.
