Balsamic and Roasted Garlic Dipping Oil

Ami Askins of San Diego, California tried a garlicky dipping oil at Grappa in Park City, Utah. And although bottles of the oil are sold at the restaurant, she'd like to be able to make it fresh at home. Try this versatile dipping oil with bite-size pieces of your favorite breads — or drizzled over sliced tomatoes.

Tucson Black and White Bean Salsa

Great with tortilla chips as a dip. Or try it as a vegetarian filling for burritos adding grated Monterey Jack cheese, too.

Pickled Sugar Snap Peas

The best way to eat sugar snap peas is right off the vine. This recipe ranks a close second, though. I pickle any sugar snap peas that the kids don't eat right away, and continue to enjoy them for weeks after the pea vines have wilted away.

Ancho-Rubbed Steaks with Clemetine-Red Onion Salsa

Serve with: Baked potatoes and sautéed zucchini. Dessert: Dulce de leche ice cream with toasted almonds.

Roasted Pear Chutney

The most difficult part of this recipe, other than assembling the ingredients, is marshaling the patience to wait while the chutney rests in the refrigerator. The chutney will keep for 2 weeks, as long as it's covered and refrigerated.

Pickled Carrot Sticks

Zanne Stewart, Gourmet's executive food editor, originally developed these carrot sticks to take on a picnic, but they were such a hit they've become a staple in her refrigerator. Best of all, they don't need to be sealed in sterilized jars, so they're a snap to make.

Onion, Raisin, and Garlic Compote

This recipe is an accompaniment for Brined Pork Loin with Onion, Raisin, and Garlic Compote .

Cantaloupe Basil Salsa

Juicy cantaloupe makes a refreshing salsa for grilled chicken or fish. For a milder salsa, discard all the chile seeds.

Cranberry-Avocado Salsa

Make the salsa at least an hour (and as much as a day) before serving to allow the flavors to blend. This is also delicious with turkey. This recipe is an accompaniment for Spice-Rubbed Pork Tenderloins in Corn Husks with Cranberry-Avocado Salsa.

Kumquat and Cranberry Compote

If you can't find kumquats, don't panic — the recipe works fine without them. Active time: 20 min Start to finish: 1 1/2 hr

Fennel Cucumber Relish

This recipe is an accompaniment for Grilled Brined Salmon and Eggplant with Fennel Cucumber Relish.

Cilantro Oil

This recipe is an accompaniment for Yellow Tomato Gazpacho with Cilantro Oil and Avocado.

Watermelon Rind Chutney

This tangy, spicy chutney is a twist on southern pickled watermelon rind. Active time: 45 min Start to finish: 25 1/2 hr (includes chilling)

Creamy Caramel Sauce

This recipe can be prepared in 45 minutes or less. This recipe originally accompanied Chocolate Soufflés with Creamy Caramel Sauce .

Garlic Rosemary Jelly

This recipe was created to accompany Crown Roast of Lamb .
