Mixed Greens with Goat Cheese and Candied Almonds

"Last year I spent the holidays in Arizona with my aunt and uncle, who took me to a restaurant in Scottsdale called CREW," writes Lisa C. Holley of Washington, D.C. "I loved the goat cheese and mixed-green salad with candied nuts, and have looked for similar recipes on-line. I haven't found anything nearly as good." The candied almonds in this recipe are also delicious as a snack on their own—or sprinkled over ice cream.

Cantaloupe Soup

A dash of curry powder transforms this cool fruit soup into a sweetly savory first course.

Cider-Braised Cabbage

Braising the cabbage in cider gives it a light but distinct apple flavor.

Roast Turkey with Maple Herb Butter and Gravy

Maple syrup and apple brandy lend a delicate flavor to the turkey and gravy. The New England Sausage, Apple and Dried Cranberry Stuffing is an especially nice accompaniment. Watch how to prepare and carve your bird with our streaming video demonstration.

Cider-Glazed Roasted Root Vegetables

Elegant batons of carrots, parsnips, and rutabagas make a pretty presentation. Serve this alongside roast pork, beef, or lamb. Market tip: If carrots still have the tops attached, make sure they are bright green and fresh-looking. Choose cream-colored parsnips that taper gently; this makes it easier to cut uniform pieces. Medium-size rutabagas (about the size of a yellow onion) are best; larger ones can be woody.

Crown Roast of Pork with Apple and Pork Stuffing and Cider Gravy

A simply spectacular main-course. Ask the butcher to grind any pork trimmings to use in the stuffing. Either hard cider or Pinot Noir would be delicious alongside.

Marsala Baked Apples

Filled with raisins and brown sugar and baked in Marsala and cider, these apples make a warming ending to the meal. Accompany them with vanilla ice cream and some purchased almond biscotti.

Apple Ginger Pie with Cider-Bourbon Sauce

It is said that bourbon was first distilled in 1789 by a Virginia minister, and by the nineteenth century it had become an important regional industry. It makes a great cocktail, of course, but we also like it in this rich sauce.

Roast Turkey with Cider Sage Gravy

Everyone wants the juiciest turkey possible for Thanksgiving, and we find that brined or kosher turkeys are best for this. If you'd like to try brining, stir together 8 quarts water with 2 cups kosher salt in a 5-gallon bucket lined with a large heavy-duty plastic garbage bag, then soak raw turkey, covered and chilled, 10 hours. (Kosher turkeys, which are salted during the koshering process, are just as succulent and flavorful as brined ones.) If you are making this entire menu in a single oven, bake the stuffing and sweet potatoes and reheat the potato parsnip purée while the turkey stands after roasting.

Cider-Brined Pork Chops with Creamed Leeks and Apples

Brining the pork makes it especially juicy.
