Once you roast a beet, you'll never go back.
Don't throw away the beet greens: braise or sauté them if they are large, or add them to salad greens if they are small.

I always had mixed emotions about this dish as a little girl. Traditionally, it was served at the first meal after Lent, a joyous occasion to which everyone looked forward, including me. At Busoler I spent long hours playing in the fields with lambs and young goats, and always found sentiment struggling with appetite at Easter. When the appearance of the first peas of the season coincided with Easter, they'd be shelled and added to the dish at the last moment.

Roast Leg of Lamb with Fennel Butter
If you don't have a heavy roasting pan, you can brown and roast the lamb in a large ovenproof skillet with two-inch-high sides. The seasoned butter can be prepared one day before using. What to drink: A red Bordeaux is the classic accompaniment to roast lamb. Other full-bodied reds, such as Burgundy or an aged Rioja, would also complement this menu.

"When I moved to Seattle last year, I found myself really missing my Studio City, California, neighborhood," writes Tim Westmoreland of Seattle, Washington. "There were so many great places to eat there, especially Pinot Bistro. I am craving its roasted chicken with caramelized onions. Would you see if chef Miki Zivkovic would send me an order? At the restaurant, the chicken is accompanied by shoestring fries sprinkled with chopped fresh parsley and the chef's own garlic-salt mixture.

Roasted Salmon with Cranberry-Mustard Sauce
A terrific way to finish off the cranberry relish. Make full use of your oven — and your time — by roasting small red-skinned potatoes alongside the fish, then tossing the potatoes with butter and parsley to have as a side dish. Boil slim green beans or haricots verts to complement the main course. End the meal with slices of marble pound cake ("toasted" briefly in the oven) topped with chocolate sauce and whipped cream.
