A Soup of Broccoli and Bacon

A good use for the older, tougher specimens. I have made this with those plastic-entombed bunches from the late-night corner market and you would never have known it.

Sprouting and Blood Oranges on a Frosty March Day

The market: stumpy carrots, the prickle of frost, dark greens, the scent of wet soil. Here and there among the trestle tables are shallow baskets: Russian kale, tips of cavolo nero with their infant leaves, broccoli heads the size of a mushroom, and sprigs of purple and white sprouting so small you can hold ten in the palm of your hand. Each sprig of vegetable is so precious, so diminutive, as timid as a chanterelle. I pick them up with finger and thumb, which seems the way they must have been picked from their stems. These are shoots plucked from the stem after the growing heart of the plant has been removed. No smothering of cheese sauce, just a three-minute trip in the steamer and a classic hollandaise to dip them in, let down with a dash of cream and a grating of zest from a blood orange.

Marinated Mackerel with Dill and Beets

Clean flavors here, a delightful main-course salad for a summer’s day. You could use other fish, such as red mullet, if you prefer, but the richness of mackerel’s flesh goes well with the sweet beets and tart marinade. Some watercress would be good with this, and maybe a few slices of dark bread and butter.

Warm Asparagus, Melted Cheese

I have used Taleggio, Camembert, and English Tunworth from Hampshire as an impromptu “sauce” for warm asparagus with great success. A very soft blue would work as well.

Watercress Mashed Potatoes

Watercress (shown below) gives these mashed potatoes a peppery bite. They are a perfect accompaniment to fish, chicken, and mushroom entrées. Try serving them with the Grape and Ginger–Glazed Chicken (page 56). If you have leftovers, add hot stock to make a warming soup. Alternatively, whisk in milk or cream and serve as the classic cold potato soup vichyssoise.

Tofu Banh Mi Sandwiches

Banh mi sandwiches are a Vietnamese street food. Instead of the typical pork and mayonnaise, this version features baked tofu, an anchovy-miso dressing, and cucumber pickles. A key element of banh mi sandwiches is fresh bread—day-old bread is too dry. The best bread to use is a thin-crust white flour baguette that won’t overwhelm the sandwich fillings. Try making these sandwiches for a July picnic.

Grilled Mussels with Simmered Tomatoes over Couscous

I tasted grilled mussels for the first time last summer and they were a revelation. Grilled mussels cook in their own brine and have a rich, undiluted flavor. This Mediterranean-style meal pairs them with fluffy couscous and a quick tomato sauce. This recipe also works beautifully with clams. You can cook the tomatoes a day ahead and warm them up just before serving.

Chunky Tortilla Soup

This rustic soup is laden with beans, vegetables, and cheese. A chunky version of the typically smooth tortilla soup, it doesn’t require any traditional soup stock; the tomato juice and sweet corn cobs make a rich broth full of the fresh, south-of-the-border tastes of summertime. Watermelon Gazpacho

This sweet and tangy cold soup is one of Lucid Food’s signature dishes. For catered events, we often serve it in shot glasses as an hors d’oeuvre. A guest once suggested we top them off with vodka, and so a wonderful new take on the Bloody Mary was invented. You can make this recipe a day ahead and reseason it just before serving.

Spot Prawns with Garlic, Sorrel, and White Wine

Lemony sorrel brightens the flavor of spot prawns, large shrimp that can be served with the head and tail on or peeled. To remove the shell, use scissors to cut down the back to the tail tip. Like all shrimp, prawns only take a minute or two to cook, and after that can become tough. Millet provides a fluffy bed that soaks up the sauce. Start this recipe the night before serving so that the millet can soak.

Miso-Glazed Striped Bass with Shiso Cucumber Salad

Shiso, also known as “beefsteak plant,” is a pungent, wild-tasting herb native to North America but typically sold only in Japanese markets. Often served with sushi, shiso is essential here for bringing the flavor of the fish to life. Dry sake served cold rounds out this dish well.

Almond Tofu with Snap Peas and Soba Noodles

With baking, the texture of tofu turns satisfyingly dense and chewy. In many cities, you can find fresh and creamy locally-made tofu at farmers’ markets, food co-ops, and in Asian markets. Tender spring snap peas are quick to cook; here they are simply placed in a colander and cooked with the hot water from the soba noodles.

Orecchiette with Morel Mushrooms and Garlic Ramps

This recipe pairs two foods you might find on a spring hike: morels and ramps, the latter being the wild leeks that grow from South Carolina to Canada. Both have the fresh earthiness of spring, tempered here by the richness of Grana Padano and mascarpone. Buying morels can get expensive, so if you can only afford a few, you can make up for it by adding another portobello or two. If you can’t find the pasta called orecchiette (literally, “little ears”), use small shells or another bite-size pasta.

Watercress with Roasted Enoki Mushrooms and Peas

Enoki mushrooms are also known as “snowpuffs” or “golden needle” mushrooms because of their long, stretched stems and white caps. They come to us from Japan, where they are served raw or lightly cooked. Enoki are usually sold refrigerated in sealed plastic packets of 3.5 to 7 ounces. Despite their delicate appearance, they have a surprisingly meaty texture, especially when roasted. Mirin, or rice wine, is a sweet Japanese cooking wine that has a low alcohol content. If you can’t find mirin, substitute a tablespoon of honey mixed with a drop of white wine.

Lemony Gold Beet Barley Risotto

Barley replaces the traditional Arborio rice here for a textured, nutty-tasting whole-grain risotto. Soaking the barley overnight reduces its cooking time. Gold beets have a sweet, mellow flavor. When roasted with the skin intact, their beautiful color is preserved. Wait to salt the risotto until you’ve added the ricotta salata; as the name implies, it is quite salty. This aged ricotta does not melt, but instead retains a pleasant firm chewiness.

Fesenjan

Fesenjan combines fruit and meat, a Persian cooking style that traveled to Europe in the Middle Ages. This version gets its deep ruby color from the addition of beets (shown opposite). Served with rice, this stew makes for a sumptuous feast. Instead of chicken, try using duck or tempeh. Look for pomegranate syrup at natural and Middle Eastern food stores. If you can’t find pomegranate syrup, substitute 2 1/2 cups of unsweetened pomegranate juice and leave out the stock.

Oven-Roasted Dungeness Crab with Fennel and Orange

This dish is inspired by the Provençal ingredients of fennel, orange, and fresh seafood. For the fullest flavor, rub the marinade into all the cracks and crevices of the crab shell. You’ll want to have bibs, nutcrackers, and crab forks on hand to enjoy this meal in all of its messy goodness. Serve with a light green salad and plenty of fresh, crusty bread to soak up the sauce.

Warming Asian Rutabaga Soup

Rutabagas are a robust winter standby that lend themselves well to Asian dishes, where they can act as a sweeter stand-in for the turnips often used in Chinese, Japanese, and Korean cooking. I use chicken stock in this recipe because its richness brings all of the subtle flavors of the dish alive. The star anise lends this soup a fragrant, smoky sweetness.

Crispy Yuba Rolls with Lime-Mustard Dipping Sauce

Yuba, also called tofu skin, is sturdy and easy to work with. Its crisp texture when baked makes it an ideal wrapper for spring rolls. Find dried or frozen yuba sheets at Japanese food stores.

Congee with Vegetables and Fresh Herbs

In many parts of the world, breakfast is a savory affair. Throughout Asia, hearty congee is a favorite morning dish, eaten with condiments ranging from stir-fried pork to fried garlic. This version gets a citrus zing from lemongrass (shown below) and ginger. Normally made with white rice, the grain most widely available in Asia, congee can be made using any whole grain. Soaking the rice overnight cuts the cooking time in half.
