Lentil Soup with Minted Yogurt

Cool and refreshing yogurt enhanced with fresh mint, cilantro and basil tops this hearty curry-flavored soup.

Fisherman's Soup

(Cacciucco) This seafood soup, called cacciucco (meaning "mixture"), is a specialty of Livorno, a fishing port that is Tuscany's second-largest city. It has been made for hundreds of years, and variations of it appear all along the Tuscan coast. Traditionally, at least five types of fish and shellfish are included (one for each "c" in the name). If you like, do as the Italians do, and place a slice of toasted bread in each bowl before ladling the soup over.

Classic Fish and Chips

We like to team this with red and green cabbage coleslaw, pickled onions and carrot sticks-as well as a pint of ale. Have lemon ice cream cones for dessert.

Pumpkin-Coconut Bisque

This rich, silky soup has a touch of spice.

Light Minestrone

For a thicker, more traditional soup, replace all the green peas with a half cup of drained canned white beans.

Cassoulet Soup

Duck, turkey or dark chicken meat can substitute for the goose with equally delicious results. Fine accompaniments are a green salad with Roquefort vinaigrette and hot crusty bread. For a quick and sophisticated dessert, add a bit of red wine and ground cinnamon to canned pears with their syrup.

This low-fat rendition of the classic dish comes from Gil Martínez Soto of Restaurante Virrey de Palafox in El Burgo de Osma, Spain.

Seared Salmon on Baby Spinach

This recipe can be prepared in 45 minutes or less. Complete the entrée with a dilled cucumber salad, steamed squash and popovers (from a mix). End with purchased strawberry tarts.

Potato-Leek Soup with Cheese

Julia Shure of Albany, California, writes: "This comforting soup has both cream cheese and cheddar, which give it a rich, smooth texture. While it makes an elegant first course, the soup can also be a satisfying meal partnered with a simple salad and some crusty bread."

Hearty Lamb and Vegetable Stew

Shullie Neumark of Rancho Palos Verdes, California, writes: "I like cooking but I'm a little bit impatient, which is why I make dishes that can be done ahead of time — and quickly. I hate being rushed before meals, especially when guests are on their way over. Those guests are usually good friends or members of our large family. My husband and I emigrated from South Africa seven years ago. I am retired from preschool teaching, but I still keep busy by cooking for the family. A typical South African dinner is a barbecue with lots of grilled lamb chops and sausages."
