Variation: Saffron Risotto

We couldn’t not include this seasonless classic. Buy the best-quality saffron threads you can find. The saffron pairs perfectly with Bouillabaisse Balls (page 23)

Ingredients

1 teaspoon saffron threads
1/4 cup warm water

Preparation

  1. Soak the saffron threads in the warm water for 5 minutes. Set aside. Add the saffron to the risotto along with the final addition of chicken stock. Proceed with the recipe as directed.
