Ingredients

1 garlic clove, peeled
1 10-ounce package frozen chopped spinach, thawed, drained, squeezed dry
8 ounces soft fresh goat cheese (such as Montrachet)
6 tablespoons crumbled feta cheese (about 2 ounces)
2 teaspoons chopped fresh mint
1 teaspoon grated lemon peel

Preparation

  1. With machine running, drop garlic through feed tube of processor and finely chop. Add all remaining ingredients and process until well blended and almost smooth. Season to taste with salt and pepper. Transfer spread to bowl. (Can be prepared 2 days ahead. Cover and refrigerate. Let stand at room temperature 1 hour before serving.)
