Strawberry-Mango Salsa

This exciting, inviting fruit salad is especially delicious served with grilled pork or chicken.

Ingredients

1/4 cup lime juice
2 tablespoons sugar
1 teaspoon grated peeled gingerroot
1 medium mango, diced, or 1 cup diced refrigerated or frozen mango slices, thawed
2 cups diced strawberries (about 1 pint)
1 to 2 tablespoons finely snipped fresh cilantro
1 medium fresh jalapeño, seeds and ribs discarded, finely chopped

Preparation

  1. Step 1

    In a medium bowl, whisk together the lime juice, sugar, and gingerroot.

    Step 2

    Stir in the remaining ingredients. Serve at room temperature or cover and refrigerate for up to 1 hour. (Flavors are at their peak if the salad is served within 1 hour.)

    Replace the strawberries with peaches, the mango with blueberries or raspberries, the lime juice with lemon juice, and the cilantro with mint. Omit the jalapeño.
