Spiced Gingerbread

Ingredients

2 large eggs
3/4 cup molasses
3/4 cup coconut sugar (or brown sugar)
3 tablespoons ground ginger
1 tablespoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground mace
1 teaspoon sea salt
1/8 teaspoon ground black pepper
1 teaspoon vanilla extract
Grated zest of 1 lemon
1 teaspoon baking soda
1 1/2 cups white spelt flour (if you must substitute use 3/4 cup white flour and 3/4 cup whole wheat but this recipe will work best with the white spelt flour)
8 tablespoons butter, melted
3/4 cup water
1 1/2 teaspoons apple cider vinegar
2 cups apples, cored, peeled, small diced

Glaze:

1 cup confectioner's sugar
1 tablespoon vanilla extract
2 tablespoons whole milk

Preparation

  1. Step 1

    1. Preheat oven to 350°F.

    Step 2

    2. Grease and flour a bundt pan or an 8x8 pan.

    Step 3

    3. In a standing mixer or large mixing bowl, beat eggs.

    Step 4

    4. Add molasses, sugar, spices, salt, vanilla, and lemon zest, and baking soda. Mix to combine.

    Step 5

    5. Add 1/2 cup flour. Mix on medium.

    Step 6

    6. Add melted butter. Mix on medium, stirring edges.

    Step 7

    7. Add 1/2 cup flour. Mix.

    Step 8

    8. Add water and vinegar. Mix.

    Step 9

    9. Add remaining flour. Mix until just combined, scraping sides and bottom of the bowl to mix thoroughly.

    Step 10

    10. Fold in cut apples.

    Step 11

    11. Pour into prepared pan and bake 45 minutes.

    Step 12

    12. Let cool on a rack and after a half an hour invert onto a plate or cake stand.

    13. Let cool completely before glazing.

    Step 14

    14. To make glaze: whisk confectioner's sugar, vanilla, and milk until smooth. Spoon glaze over the top letting some drizzle down the sides.
