Picante Cube Steaks

While the steak is simmering, prepare instant brown rice to serve with the sweet and spicy sauce. Round out the meal with tossed salad or your favorite green vegetable.

    serves 4, 3 ounces cube steak and about 1/2 cup tomato sauce per serving

Ingredients

Cooking spray
4 cube steaks (about 4 ounces each)
1 14.5-ounce can no-salt-added diced tomatoes
1/2 cup chopped onion
3 tablespoons lime juice
1 1/2 teaspoons bottled minced garlic or 3 medium garlic cloves, minced
1 medium fresh jalapeño, seeds and ribs discarded, diced
1 teaspoon ground cumin
2 tablespoons snipped fresh cilantro

Preparation

  1. Step 1

    Lightly spray a large skillet with cooking spray. Cook the steaks over medium-high heat for 2 to 3 minutes on each side, or until browned.

    Step 2

    Stir in the remaining ingredients except the cilantro. Bring to a simmer, still over medium-high heat, and simmer for 2 to 3 minutes. Reduce the heat and simmer, covered, for 25 to 35 minutes, or until the steaks are tender.

    Step 3

    Sprinkle with the cilantro.

    Cube steaks are not the same as steak cubes. Rather, the steaks are smallish, thin pieces of round steak that have been run through a tenderizer.
