Mushroom Gravy

A simply delicious sauce to serve over grains, veggie burgers, green vegetables, or mashed potatoes.

Ingredients

1 tablespoon nonhydrogenated margarine
8 to 10 ounces white or cremini mushrooms, cleaned and sliced
2 tablespoons unbleached white flour
1 cup canned vegetable stock
Salt and freshly ground pepper to taste

Preparation

  1. Step 1

    Heat the margarine in a medium saucepan. Add the mushrooms and cook, covered, until they are done to your liking.

    Step 2

    Dissolve the flour in enough cold water to make a smooth paste. Add it to the saucepan along with the vegetable stock and whisk together. Bring to a simmer, and cook gently until the mixture has thickened. Season with salt and pepper, and serve.
