Miniature Fresh Fruit Tarts

My kids would never eat pies until I began making them with graham cracker crusts. I’ve also lost the taste for pastry crust (who needs all that fat?). The miniature size is perfect for fruit fillings that need not be baked or that wouldn’t hold together in a large crust.

Ingredients

1 package miniature graham cracker pie shells (6 small shells)
1 recipe Chunky Applesauce (page 250), Sugared Strawberries (page 249), or Fresh Berry Sauce (page 247)
Low-fat vanilla yogurt or soy yogurt, optional

Preparation

  1. Step 1

    Preheat the oven or toaster oven to 350°F. Bake the pie shells according to package directions, remove from the oven, and allow to cool.

    Step 2

    Divide the filling of your choice among the shells. Top each with a small dollop of yogurt, and serve.
