Cooks' Note

Serve the hamburger steak with your favorite steak sauce on the side or topped with Béarnaise Sauce (see page 315 for homemade). It’s great with Sautéed Mushrooms (page 258) and with a Caesar salad (use the dressing on page 307).

Ingredients

2 pounds lean ground beef chuck
1 small yellow onion, chopped
1/4 cup chopped fresh parsley
1/2 teaspoon black pepper
1 teaspoon salt

Preparation

  1. Put the ground beef into a large bowl and mix in the onion, parsley, and pepper. Form 6 thick patties from the mixture. In batches, put the patties into a large nonstick skillet, sprinkle with salt, and cook over medium heat 5 minutes a side for medium or 7 minutes a side for well-done (but dry!).
