Elderberry-Flower Mimosa

We recommend using a good-quality California or Spanish sparkling wine for this recipe. Both are widely available and less expensive than champagne.
You may want to garnish these drinks with fresh elderberry flowers; if so, make sure the blossoms you buy are unsprayed (nontoxic).

Ingredients

1 cup elderberry-flower syrup (available at some specialty food shops)
2 (750-ml) bottles chilled dry sparkling wine

Preparation

  1. Put 2 tablespoons elderberry-flower syrup in each of 8 stemmed glasses and top off with sparkling wine. Stir gently to combine.
