Cranberry Cinnamon Baked Apples

As the apples bake, their juice combines with brown sugar and orange juice to create a light caramel sauce.

Ingredients

Cooking spray
2 baking apples, such as Rome Beauty, Winesap, or Stayman (about 8 ounces each), halved lengthwise and cored
1/2 cup dried sweetened cranberries
2 tablespoons finely chopped pecans
2 tablespoons dark brown sugar
3 tablespoons orange juice, unsweetened apple juice, or water
1 teaspoon ground cinnamon
1 teaspoon vanilla extract or vanilla, butter, and nut flavoring

Preparation

  1. Step 1

    Preheat the oven to 350°F. Lightly spray an 8-inch square metal baking pan with cooking spray.

    Step 2

    Put the apples with the cut sides up in the pan. (If needed to keep the apples from rocking, cut a very thin slice off the bottom of each half.)

    Step 3

    In a small bowl, stir together the remaining ingredients. Spoon onto each apple half.

    Step 4

    Bake, covered, for 10 minutes. Bake, uncovered, for 25 to 30 minutes, or until the apples are easily pierced with a fork.
