Cabbage is a member of the mustard family. This cabbage slaw is ready with no chilling needed, since the ingredients are chilled before you start.

Ingredients

1 red or sweet onion, chilled
4 cups finely shredded green cabbage, chilled
1/2 cup chopped flat-leaf parsley
3 tablespoons canola oil
1/4 cup apple cider vinegar
2 packets artificial sweetener
1 teaspoon salt

Preparation

  1. Quarter the onion lengthwise, then cut each quarter crosswise into 1-inch-long pieces. Combine the onion, cabbage, and parsley in a large bowl. In a small bowl, mix together the oil, vinegar, artificial sweetener, and salt. Pour the dressing over the vegetables and toss well.
