Cinnamon Apple Bars

Ingredients

Cooking spray
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
1 cup canned unsweetened apple slices or canned pears in fruit juice, drained, cut into 1/2-inch pieces
3/4 cup firmly packed light brown sugar
1/2 cup cranberry applesauce or unsweetened applesauce
1/2 cup egg substitute
1/4 cup sugar
2 tablespoons canola or corn oil
1 teaspoon vanilla extract

Preparation

  1. Step 1

    Preheat the oven to 350°F. Lightly spray a 13 x 9 x 2-inch metal baking pan with cooking spray.

    Step 2

    In a medium bowl, stir together the flour, baking powder, cinnamon, and baking soda.

    Step 3

    In another medium bowl, stir together the remaining ingredients. Add the flour mixture, stirring until just moistened. Pour the batter into the baking pan.

    Step 4

    Bake for 20 minutes, or until a knife inserted in the center comes out clean. Let cool on a cooling rack for 10 minutes. Cut into 36 bars.
