1 teaspoon superfine sugar
1 egg yolk
3 or 4 ice cubes
4 ounces chilled champagne

Preparation

  1. Combine all ingredients except the champagne in a cocktail shaker and shake vigorously. Strain into an 8-ounce wineglass and fill with champagne.
