1 tablespoon extra-virgin olive oil
2 teaspoons fresh lemon juice, or to taste
1/4 teaspoon salt
1 1/2 tablespoons chopped walnuts, toasted lightly
Preparation
In a bowl toss carrots with oil. Add remaining ingredients and toss well.
