Broiled Portabella Mushrooms

A wonderful accompaniment to the salad course of a special meal, served on a separate plate. These also make great “meaty” fillers for burger buns with lettuce, tomato, and your favorite condiments.

Ingredients

2 tablespoons dry white wine
1 tablespoon light olive oil
1 1/2 tablespoons balsamic vinegar
Pinch of salt
4 large portabella caps
Oregano for sprinkling, optional

Preparation

  1. Step 1

    Preheat broiler (unless using a toaster oven).

    Step 2

    Combine the wine, oil, vinegar, and salt in a small mixing bowl and stir together.

    Step 3

    Wipe the mushrooms clean and arrange, smooth side up, on a small foil-lined baking sheet. Brush them with the marinade.

    Step 4

    Broil in the oven or a toaster oven for 4 to 5 minutes, then turn and broil until the mushrooms are touched by charred spots, 4 to 5 minutes. Remove from the broiler, sprinkle with oregano if desired, and serve.
