Rice rolls are delicate labors of love and the perfect vessels for various fillings, yet delectable enough to be eaten alone. This classic Vietnamese rice roll starts with a thin, crepe-like batter that gets steamed in a pan; the resulting noodle sheet is light with just the right amount of bounce.
