Agua de Pepino con Limón

This quick and refreshing drink is great on its own, but it’s also a good base for other beverages. Try stirring in some chopped fresh mint, raspberries, honeydew, or pineapple, or a combination. I’m not sure how it works, but rubbing the end really does help remove bitterness from standard cucumbers; the trick doesn’t apply to English or Persian cucumbers.

Ingredients

1 large cucumber
6 cups water
1/3 cup freshly squeezed lime juice (2 to 3 limes)
1/3 cup sugar, or more if needed

Preparation

  1. Step 1

    Rinse the cucumber well. Leave the skin on, cut off about 1/2 inch from one end, and rub the two flat surfaces against each other (this helps remove any bitterness). Discard the end piece and repeat with the other end.

    Step 2

    Slice the cucumber, then put it in a blender. Add the water and blend until completely pureed. Strain through a fine-mesh sieve into a pitcher, then add the lime juice and sugar and stir until the sugar is completely dissolved. Taste and add more sugar if you like.

    Step 3

    Refrigerate until completely chilled. Serve over ice.
