Brunch

Eccles Cakes

Michael P. Hooley of San Francisco, California, writes: "While I was in London, I went to Fortnum & Mason and had a delicious currant-filled pastry called an Eccles cake. Would it be possible to get the recipe?" These sweet pastries are named after the town in Lancashire where they originated.

Corn Cakes with Shagbark Hickory Syrup

Active time: 20 min Start to finish: 20 min I always use white cornmeal, as do many southerners — it has better flavor and tends to have a finer grind. When traveling, I look for cornmeal from specialty mills, but at home I stick with Kentucky Kernel or Nunn-Better, which I get at the local grocery. I urge people to buy cornmeal that has been grown and ground close to home — freshness is more important than brand.

Maverick Grits

"On a recent visit to Charleston, South Carolina, I was greatly taken with the grits served at the restaurant Slightly North of Broad, on East Bay Street," says Charles C. Gordon of Ontario, Canada. "Is it possible to get the recipe?"

Baked Eggs with Artichokes and Parmesan

Although these are super-fast to make, you can assemble them the night before so that they're ready to bake in the morning.

Spiced Tomato Chutney (Mountain Jam)

Piquant and full of spices, this chutney is an unexpected, pleasantly bright condiment for scrambled eggs. Active time: 45 minutes Start to finish: 1 week (includes allowing flavors to develop)

Mango, Blueberry, and Ginger Fruit Salad

Active time: 15 min Start to finish: 35 min

Ginger Scones

"While visiting Los Angeles recently," says Katherine Mollen of New York, New York, "I made sure to get to La Brea Bakery. The ginger scones were the best I've ever had. Since there's nothing that comes close here in New York, I'd like to try to make them at home."

Fried Green Tomato "Blt"

Margaret DeMatteo of Stirling, New Jersey, writes: "My husband recently took me to the nearby Perryville Inn to celebrate my birthday. We had a fabulous 'BLT' appetizer made with layers of fried green tomatoes, pancetta, and basil mayonnaise. I would greatly appreciate it if you could get the recipe."

Corn Bread with Fennel Seeds, Dried Cranberries, and Golden Raisins

Active time: 30 min Start to finish: 1 1/2 hr

Mussels with Coconut Curry Sauce

Mimosa in Los Angeles uses coconut milk in this version of a Breton classic.

Lemon-Poppy Seed Waffles with Blueberry Sauce

There are only five employees at The Little Rooster Cafe, a small breakfast and lunch spot, but its terrific food and friendly service make it popular with locals and tourists (especially those who come to browse the town's outlet stores). Chef and co-owner Hub Poelmann features a different waffle every day. "We have an open kitchen," he says. "People smell the waffles cooking, and then order them." Poelmann credits his cooks with this lemon-poppy seed recipe, which was the happy result of "playing around in the kitchen." These light waffles would also be good with maple syrup, if you prefer.

Corn, Scallion, and Potato Frittata

This frittata makes a perfect brunch or lunch — it works especially well for a picnic. And on a steamy summer night, it may be all you need for dinner. Adding a green salad and a nice piece of bread is an easy way to round out the plate.

Cranberry Coffeecake

Active time: 15 min Start to finish: 1 3/4 hr

Chiles Stuffed with Scrambled Eggs and Bacon with Chihuahua Cheese Sauce

Chiles Rellenos con Huevos y Tocino con Salsa de Queso Chihuahua Translated, Las Ventanas al Paraíso means "Windows to Paradise." With an ocean view from nearly every room, four infinity pools that seem to stretch to the sea, and a personal escort to your room (no front desk), the name is no exaggeration. The peacefulness is a sharp contrast to the bustle of Los Cabos, just outside the property's doors. If you can bear to venture outside your beautiful room, try the resort's two restaurants — the Sea Grill, where you'll find contemporary Mexican offerings like this breakfast version of chiles rellenos, and The Restaurant, which uses local ingredients to create delicious Mediterranean-inspired dishes.
