Walnut
Caramelized Nut Tart
Any combination of nuts will work nicely in this winter tart.
Chocolate Layer Cake with Rocky Road Frosting
Cake making was quite a fad in the twenties. The new gas stoves were efficient, reliable and easy to operate; besides, with more women working outside the home, there wasn’t as much time to prepare multiple desserts, so fancy layer cakes were made to satisfy everyone. Marshmallows were popular in the decade, and they were used in desserts, salads and side dishes. Here they sweeten an old-fashioned frosting and decorate this easy-to-make chocolate cake.
Sherried Walnuts
A longtime favorite of copy editor Brenda Koplin. They are great for parties and make lovely gifts, too. Brenda likes to pack them in pretty containers, with the recipe included.
Apricot and Walnut Varenikis
Ukrainian Dessert Dumplings
These stuffed dessert dumplings with a chewy noodle-dough wrapping are a Ukrainian specialty. The fruit fillings vary widely—ours are stuffed with dried apricots and walnuts, then sprinkled with a cinnamon-crumb topping.
Steamed Pumpkin Bread with Walnuts and Dates
Ken Haedrich, cookbook author, says, "Since moving to New England nearly twenty years ago, I've heated the house with wood-burning stoves. And because our big Thanksgiving gatherings put oven space at a premium, I've often pressed those stoves into backup duty. That's how steamed breads—which can be cooked on top of the stoves — came to be a regular part of our feast. This steamed pumpkin bread provides another way to bring good pumpkin flavor to the meal, too.
I also serve my special crescent rolls on the big day. One year, my kids let it be known that they wanted croissants on Thanksgiving, but that seemed like a bit more work than I could handle. Instead, I came up with these sesame crescents—croissant-like rolls with savory onion filling. I guess they did the trick, because nobody says much about croissants anymore. Plus, I can make the crescent rolls two weeks ahead and freeze them. That way, they don't take up any of that precious oven space."
Note that this bread needs to cook in an empty 28-ounce food can (such as the kind used to hold whole tomatoes).
Steffi's Brownies
For the fudgiest brownies, be sure not to overbake these, from Steffi Berne's Cookie Jar Cookbook.
Vanilla Praline Meringue Cups with Blackberry-Raspberry Sauce
This elegant dessert was inspired by Vienna's Spanische Windtorte, a giant meringue shell filled with cream and berries. The sauce is a colorful and delicious accompaniment; if there is some left over, use it on pancakes, waffles or ice cream.
Shaker-Style Walnut and Rosemary Loaf
The Shakers, who once had a number of active communities in New England, were known for their creative use of fresh herbs in cooking and baking. This savory yeast bread is a typical example. It is delicious freshly baked or toasted the following day.
Walnut Crepes with Raspberries and Dried Figs
(CREPES DE NOIX AUX FRAMBOISE ET FIGUES)
In Provence, crepes are often served simply, embellished with sugar, jam or liqueur. Here, they get dressed up a bit more.
Walnut Snowballs
These are favorites in Mexico and Russia.
Mother Berta's Carrot Cake
When you're cooking with veggies, don't overlook dessert! This cake has great texture, thanks to both pureed and grated carrots. It's delicious with or without frosting and great for parties.
Claire's Mandelbrot
Ilene Danuff of New York, New York, writes: "This recipe was created by my mother. I've substituted chocolate chips for the M&M's MINIs that she uses."
Mandelbrot is a traditional Jewish cookie that resembles biscotti but is more tender. Claire Danuff sprinkles her cookies with cinnamon sugar before baking, but we prefer them plain. To try the topping, combine 1/4 cup sugar with 1/2 teaspoon cinnamon.
