Turkey

Smoked Turkey and Cheese Spread

Delicious on crackers or as a filling for small tea sandwiches.

Achiote Butter-Basted Turkey with Ancho Chili Gravy

Achiote paste is a combination of vinegar, spices and annatto seeds, which have a unique, earthy taste. Basting the turkey with butter and achiote yields a moist, richly flavored bird, and the slightly piquant sauce is a refreshing change of pace from traditional gravy. Offer your favorite mashed potatoes, and pour a Pinot Noir.

Present the turkey before carving it. I suggest garnishing it with fresh sage and kumquats.

Roast Turkey with Herb Butter and Caramelized Onion-Balsamic Gravy

The gravy can be started while the turkey roasts. When the turkey is through cooking, finish the gravy with balsamic vinegar and the pan juices. Watch how to prepare and carve your bird with our streaming video demonstration.

Turkey and Broccoli Pot Pies

Have your butcher skin and bone the turkey thigh. Toss curly endive and radicchio with apple slices and cider vinaigrette for a salad. Orange sorbet with warm chocolate sauce and toasted pecans is a simple ending.

Roast Turkey with Oranges, Bay Leaves, Red Onions, and Pan Gravy

Active time: 1 hr Start to finish: 4 hr We think all turkeys are improved by brining (soaking in salted water), but it's a cumbersome process that few holiday schedules can accommodate. We found kosher turkeys, which are salted during the koshering process, to be just as flavorful and succulent as brined ones, without all the fuss. However, if you'd like to try brining, just stir together 8 quarts water with 2 cups kosher salt in a 5-gallon bucket lined with a large heavy-duty garbage bag, and soak turkey, covered and chilled, 10 hours. If you don't have room in your refrigerator, executive editor John Willoughby recommends brining in a large plastic cooler, using freezer packs to keep the water cool and replacing them as needed.

Maple Ginger Roasted Turkey

A turkey seems simple to prepare but needs extra attention, so make the glaze and stuffing ahead. Wash the bird well, refresh it with an orange and use cooled stuffing! The cooked-turkey temperatures given here are USDA-approved.

Speidies

In central New York State where I grew up, summertime is speidie-time. Speidies are beef or chicken kabobs marinated in a locally produced spiedie sauce. Nobody makes their own; everybody buys it by the case to make it through the summer's grilling. Now that I live downstate, I've had to devise my own speidie sauce (really nothing more than a quite acidic vinaigrette), which I'm willing to share for the very first time.

Roast Turkey with Sherry Wine Vinegar Gravy

The vinegar in this gravy gives it an appealing tartness. Round off the meal with cranberry sauce and steamed broccoli. Watch how to prepare and carve your bird with our streaming video demonstration.

Orange- and Mustard-Basted Turkey with Apple Cider-Mustard Gravy

The gravy is a refined, delicious sauce in this duo from Barbara Shinn and David Page, co-owners of Home restaurant in New York and co-authors of Recipes from Home.

Turkey Patties with Tarragon-Mustard Gravy

Mashed Yukon Gold potatoes, brussels sprouts tossed with slivered pimiento, and gingered baked apples are updates of American classics that would go well with this turkey twist on Salisbury steak.

Turkey Tortilla Soup

For cool contrast to the spicy soup, serve an orange, red onion and avocado salad sprinkled with ground cumin, fresh lime juice and olive oil. Complete the main course with corn bread, and end with vanilla pudding topped with cocoa powder and chopped pecans.
