Lobster Stew with Tomatoes and Peppers

A classic of the Balearic Islands, where lobster is found in abundance, this stew (known as caldereta) is intensely flavorful and fun to eat. Live lobster is essential, since the tomalley (liver) is a key ingredient. Serve the stew with plenty of crusty country-style bread.

Roasted Chicken, Zucchini, and Ricotta Sandwiches on Focaccia

The recipe calls for purchased roasted chicken, which eliminates a step.

Tortilla Soup

A low-fat version of the Mexican soup.

Smoked Vegetable Salsa

If you have a gas grill and want great smoky flavor, soak hickory-wood chips in water one hour. Drain well; place chips in a disposable aluminum pie pan directly over flames (or over lava rocks if they are part of the grill's design). Allow chips to begin smoking, then grill vegetables until tender. This recipe is an accompaniment for Spicy Barbecued Rib-Eye Steaks with Smoked Vegetable Salsa .

Not Just Buttered Noodles

Delicious with roasted meats or chicken.

We seasoned this salad — based on the Middle Eastern bread salad called fattoush — with za'atar, a mixture of salt, sumac, sesame, and thyme.

Grilled Scallops with Curried Tomato Coulis

Sweet-and-Sour Stuffed Mustard Cabbage

There are several varieties of mustard cabbage; for this recipe we used wrapped-heart mustard cabbage, also called swatow or dai gai choy. Sharp and pungent when raw, mustard cabbage sweetens and mellows with wilting and slow cooking. Try serving this dish with mashed potatoes, which go very well with the gravylike tomato sauce the stuffed cabbage is cooked in.

Simple Vegetable Couscous

With such hearty vegetables, this can easily be served as a meatless main course.

Octopus with Linguine

Though Rose Pascale always uses fresh octopus (sold as pulpo in many Latino markets), we found that it's generally sold frozen. You may need to special-order or reserve octopus from your local fish market several days ahead.

Swiss Chard Ravioli with Quick Tomato Sauce

Stuffed pastas such as ravioli are simple to make, but it is important to keep the dough soft enough to be worked easily. Always roll out and fill 1 sheet of dough at a time, keeping the remaining dough wrapped in plastic wrap to prevent it from drying out.
