Mostaccioli with Fresh Basil and Mozzarella
Bocconcini, literally “little mouthfuls,” are small rounds of fresh mozzarella that are often sold wherever larger rounds of fresh mozzarella are made. (If you can find bocconcini made from water buffalo’s milk, they’re even better for this pasta.) Bocconcini can vary in size from store to store. If yours are larger than the type called ciliege (cherries), you may want to cut them into quarters, so they fit neatly on a spoon alongside the pasta. If you can’t find bocconcini of any type, cut larger pieces of fresh mozzarella into 1-inch cubes.
Penne with Cherry Tomatoes, Basil, and Mozzarella
I like to eat the pasta hot with room-temperature sauce, but you could just as well serve it all cold. In that case, toss the tomatoes and pasta while still hot, then set them aside until you’re ready to serve them. Finish the pasta by tossing in the basil and bocconcini and serve. I can go on detailing recipes with minimal changes in the ingredient list or techniques, but what I want to leave with you is not only recipes but the understanding, and hence the liberty and confidence, to deviate from the recipe path and come up with a version of the plate that reflects your personal taste and local produce. When you reach this point, cooking is truly a joy.
Rigatoni Woodsman-Style
The “riga” in “rigatoni” means “stripe.” It is those stripes and rigatoni’s wide, hollow shape that make them perfect for a chunky sauce like this one. You can make the sauce a day or so in advance; just don’t add the ricotta and grated cheese until the last minute.
Minestrone–Vegetarian or with Pork
Sprinkling the onions with salt as they cook not only seasons them, but extracts some of the water and intensifies their flavor. Keep the water hot before adding it to the soup, as described below, and you won’t interrupt the cooking—it will flow smoothly from start to end. Remember this when braising meats like the short ribs on page 218, or when making risotto. You can use the method outlined below—bringing the beans to a boil, then soaking them in hot water for an hour—anytime you want to cook beans without soaking them overnight, or anytime you’ve forgotten to soak them a day in advance. It works especially well here because, by soaking the pork along with the beans, you kill two birds with one stone. (I soak the dried or cured pork to remove some of the intense curing-and-smoking flavor. If you like it intense, just rinse the pork under cold water before adding it to the soup.)
Rice Salad Caprese
Rice salad can be made with long- or short-grain rice. I prefer short-grain rice, like Arborio, because it cooks up fluffier and absorbs more of the flavors of the other ingredients in the salad. Long-grain rice, like Carolina and Uncle Ben’s, stays firmer and has a more “staccato” effect—that is, it’ll stand more separately and distinctly from the other ingredients. The one good thing I can say about pasta salads is that people feel comfortable improvising with them. Feel free to treat rice salads the same way. Although there are some traditional combinations, like seafood rice salad or shrimp-and-asparagus rice salad, you can really be creative and make any combination. And they are a great way to use leftovers. For this dish, I took the classic salad of mozzarella, tomato, and basil from Capri, added rice, and dressed it with virgin olive oil and lemon juice. Some of my other favorite combinations are shredded grilled chicken, tomatoes, and arugula; cubes of grilled fresh tuna, Gaeta olives, Cerignola olives, cherry tomatoes, sliced red onion, and basil; grilled vegetables like peppers, zucchini, eggplant, and mushrooms with shavings of Parmigiano-Reggiano; thinly sliced raw baby artichokes, diced celery, and shavings of Parmigiano-Reggiano; rice-salad “antipasto” with cubed prosciutto, mortadella, cacciatorino, provola, Pecorino, Gaeta olives, roasted peppers, pickled mushrooms, and pickled artichokes.
Baked Clams Oreganata
I always add diced fresh tomato to this dish, because I think it contributes a little freshness. Now is the time to try to find the Greek or Sicilian oregano dried right on the branch—it makes a difference. Many Greek and Italian groceries will have it. You can buy powdered hot red pepper, but I like to chop up the flakes myself.
Mussels in Spicy Tomato Sauce
This dish can wear many hats. As is, it makes a light appetizer. Served with a zoccolo (fried bread “clog”—see the recipe that follows), it becomes a more substantial main course. Or you can prepare the mussels as described and toss them with freshly cooked linguine. This recipe will make enough sauce for a pound of linguine—six generous servings.
Bucatini with Onion, Bacon, and Tomato
This classic and delectable pasta dish originated in the region of Abruzzi, in the little town of Amatrice, northeast of Rome, where it was traditionally prepared without tomatoes. But it is the Roman version of pasta all’amatriciana, with tomatoes, that I share with you here—the version that is best known and deservedly popular. Lots of onions; chips of guanciale (cured pork cheek, now available in the United States, see Sources, page 340), pancetta, or bacon; and San Marzano tomatoes are the essential elements of the sauce, Roma style. Note that the onions are first softened in water, before olive oil is added to the pan—a traditional but unusual step that is said to make the onions sweeter. The standard pasta used is bucatini or perciatelli (spaghetti are only tolerated). The long, dry strands of perciatelli resemble very thick spaghetti but are hollow like a drinking straw. When cooked, they are wild and wiggly, so you might be tempted to cut them. Do not—once you’ve got them on your fork, they’re delicious and fun to eat. It is quite all right to slurp them. Indeed, as kids we would suck them in so fast that the end of the noodle would whip us in the nose, splattering sauce all over our faces. What a wonderful memory!
Grilled Turkey Salisbury Steaks with Tomatoes and Provolone Sauce
Classic Salisbury steak is a patty made of ground beef and seasonings that is fried in butter or oil and smothered in a brown sauce. Although it was once considered health food by its inventor—a 19th-century English-American physician named James Salisbury—it’s really not. This grilled version, made with ground turkey breast and fresh vegetables and smothered in a low-fat cheese sauce, makes the grade.
Super-Light Mexican Chili Con Carne with Beans
There is much debate over whether chili should have beans in it. Some folks think beans make chili cheap—in the same way, they say, that breadcrumbs do to meatloaf. Actually, in both cases, those interloping ingredients contribute substantially to the dish. Breadcrumbs make meatloaf tender, while beans add texture and additional meatiness to chili—and lots of fiber and antioxidants, too.
Grilled Chicken Parmigiano
Chicken Parm is one of my all-time favorite dishes. It’s as much an American classic as a burger and fries or angel food cake. The good news is that Parmigiano-Reggiano cheese is made from skim milk to start with, so there is no need to replace it with “cheese food” or anything else that’s unsuccessfully impersonating the real thing. In this version, thin chicken cutlets are grilled and topped with reduced-fat mozzarella and then sprinkled with breadcrumbs just before finishing the dish for a crispy browned topping.
Jambalaya
This Cajun dish is so associated with good times that Hank Williams named a song after it. The original isn’t so good for you, though. I made a few changes to the classic to make it easier to prepare—and much healthier. White rice has been replaced with brown, and much less fat is used to cook the vegetables and meat. Feel free to improvise by adding chicken, fish, or vegetables.
BLT
Using turkey bacon would have been the shortest route to making over this classic sandwich—but when bacon is the first ingredient in the name of a dish, you have to figure out a way to use the real thing. So I made over the mayonnaise instead.
Tuna Burgers with Basil and Pepperoncini Mayonnaise
In preparing these burgers, use a food processor to chop the raw tuna, but be careful not to overdo it. Pulse just enough to chop it—too much action can toughen the fish, and you’ll wind up with a dry burger instead of a juicy, flavorful one.
Charred Beef Burgers with Baba Ghanoush
The Big Mac is a great burger—juicy, delicious, and an icon of American culture. So how do I re-create the grandeur of the Big Mac while stripping away a lot of the fat and calories that go with it? First replace the bun with a nutrient-rich, high-fiber sprouted-grain hamburger bun. My “special sauce” is made with charred eggplant and low-fat yogurt, and the beef is extra-lean. A little low-fat Russian dressing, which I consider to be my special sauce, gives it some zest—and all the rest is healthy on its own. (No cheese needed.)
