This beautiful tart features a pastry the Italians call pasta frolla — the texture of the dough is more like cookie dough than traditional French-style pastry. The lattice crust is surprisingly easy to make because it doesn't require weaving the strips.

Grilled Nectarines with Honey-Balsamic Glaze
When using an outdoor grill, add a handful of fresh charcoal to the embers after serving the main course; when it's time to cook the nectarines, the fire should be at the right temperature. Remember to brush the grill clean before adding the fruit. Sour cream is a good substitute for the crème fraîche.

Owner Corbin Douglass is known for fulfilling all sorts of requests, from ensuring that guests are seated at their favorite table in front of the fireplace to presenting an engagement ring on the dessert cart. Chef Duy Pham changes the contemporary French menu seasonally. The following dish was inspired by roast Peking duck, a Sunday tradition in Pham's family.

Duck with Port-Cherry Sauce

Scallop Brochettes with Mango-Tarragon Salsa
Pecan-studded rice pilaf and sautéed pattypan squash are great with the scallops, and lemon pound cake with sugared berries tops off the meal nicely.
Grilled Squid on Spinach, Red Pepper, and Mango Salad
This salad is as versatile as it is delicious. We loved it with squid and with shrimp. Add a loaf of crusty bread, and you've got a complete meal.

Mango Fools with Chocolate-Anise Straws
Canned mangoes are excellent in this dessert if ripe fresh ones are unavailable. Use a drained (1-lb 14-oz) can of mango slices in syrup. If the canned fruits you buy are Alphonso mangoes (our favorite variety of mango), add an additional 1/2 cup cream.
Apricot-Cherry Crisp with Lemon-Buttermilk Sorbet
If you don't have a cherry pitter, use the side of a knife to crush each cherry against the work surface. Once the flesh has been separated, remove the pit. Be sure to wear an apron; cherries tend to squirt when crushed.
Juan Diego Michel's Cheese-Stuffed Poblanos
This recipe for chiles en macedonia combines ingredients from three states—Jalisco, Colima, and Michoacan. It came from the late Juan Diego Michel, who taught in Billy Cross's schools in Napa Valley and PuertoVallarta. The dish was a favorite of the Michel family in Jalisco, where, in his younger days, Juan Diego had his own restaurant and used the recipes from 200 years ago that had been passed down to him. To Cross, he was a Mexican-cooking mentor.
